Gram's Snow Balls

These are great to make, especially if you have a good electric mixer with a paddle. It literally took minutes to mix and was fun for the grandchildren to help with. I have made these in the past with pecans, peppermint candies(crushed) chocolate chips(minis) but the wasnuts are my favorites. I made a double recipe last night and not one was left tonight!!!

Breakfast Quiches to Go

made these for the men in my family and they loved them!!Handy, easy to make and carry, and versatile as far as 'making them your own' by adding bacon, mushrooms ect. Making them again tonight for the gals at work tomorrow morning.

Sweet Potato Bake

made thisw last year for the first time, everyone loved it and I didn't have any left to take home for later.:( Since I only make this at the holiday season, I couldn't find the recipe till I looked up work 'bake' instead of casserole!I am so happy.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

I make this with thawed frozen spinach, squeezed of excess moisture,mushrooms, 2-3 slices of wheat bread, parmesian cheese,onion(or scallions) and spices to taste,in food processor with cut blade, mixing it together. I cut a pocket in a chicken breast, stuff it with mixture and wrap with a half slice of bacon. secured with wooden pick. This seems enough bacon to add flavor without too much fat.I cook as above recipe, and my family loves it!!!

Russian Tea Cakes I

I've made snowballs(russian tea cakes)for christmas all my life, following my mom's example. this year i am trying out an idea found in a cookie mag.that suggests,peppermint candies chopped in food processor and added to the dough and the powdered sugar coating, as well as lemon addes to dough(zest) and powdered lemonade(teaspoon or two) to the powdered sugar coating, sounds interesting

Honey Butter

This is basically the same recipe I use. I am going to experiment this Christmas with using fresh cranberries, chopped in processor with sugar and chopped pecans and see what happens(added to honey butter) I also go to the dollar store and pick up some glass candy dishes and fill a bunch with the honey butter for family and friends. It makes a nice Christmas gift and always gets compliments.(Make sure it goes to those who like honey!)

Zucchini Soup I

I made this with a few changes. I didnt have any potatoes so I added some carrots,cooked and blended. I also added a dash of ceyanne pepper. I loved it and it was the first cold soup my family has ever had, so it was slow going for them, but not a definate thumbs down. I will make this again , for me , at least. With all of the zucchinis hanging around this summer, this is an excellent way to use them up, also i am dieting and this is an excellent meal all around for me.
