Connie's Zucchini "Crab" Cakes

These were okay, but not great. Tasted *nothing* like crab. They'd be good served as a vegetable side, but I don't think they're hearty enough to serve as a main dish.

Scallops Mascarpone

Excellent, excellent, excellent! GREAT way to make a more stable "creamy" sauce. Only change I made was using fresh onions instead of powder, and adding some shrimp!

Fluffy Pancakes

These were very good. I did have to add a bit more flour for ours. Some people prefer their pancakes thin, some thick, so it's really a matter of preference. I let the batter sit for about ten minutes in the fridge before I made them, and I think that made a huge difference as far as fluffiness.

Spinach Quiche

This was excellent! When I told my husband what we were having for dinner, he said, "Eww." He ended up eating half of the quiche! I didn't use any butter, just sauteed everything with a bit of olive oil. I also cut down the milk to 3/4 cup, and added some asparagus.

Grilled Marinated Shrimp

Made the shrimp exactly as the recipe stated, except I cut the oil by 1/2. It was great! I used the extra marinade to make a cream sauce for pasta. It was excellent! I was afraid the sauce would be too spicy, but with the cream and pasta, it balanced it out perfectly. My two year old even loved it!

Baked Slow Cooker Chicken

I was very disappointed by this recipe. After reading some of the other reviews, I went ahead and slathered on the spices, inside and out, after making cuts in the skin so that it would soak into the meat. I also stuffed an onion and some peppers into the cavity. It was still VERY bland! I have no idea how that happened, but it did! The meat was very tender and juicy, though. I think people who are ending up with dry chickens are placing them breast side up, which will dry out the breast meat.

My Best Clam Chowder

Awesome! Tasted just like my mom's. Used all clam juice, no water. Didn't need much salt because of that. Also, I added some shrimp, just cause that's how my mom made it. It was fabulous!

Awesome Korean Steak

This was great! We loved it! It would probably be even better if I were able to find mirin. I ended up using grape juice instead, and a little less sugar to balance it. Thought about using the rice wine vinegar like other reviewers suggested, but replacing wine with vinegar just doesn't seem right to me.

Pizza Dough I

Very good! Any loss of texture (which I did not notice) is well made up for by not having to spend three hours making dough. Baked it on a sheet pan, and it made a very good thin crust pizza. Next time I will add herbs to the dough, and bake it for 5-10 minutes before I add the toppings.

Barbecue Ribs

Excellent. Easily the best ribs I've ever had. I boiled them, definitely got rid of LOTS of the fat. Used whiskey instead of rum...adds a great flavor!
