Amy's Asparagus Casserole

Super Sunday Chicken

This was good and simple to make. I addded about a tablespoon of sour cream to the soup and used a box of Stove Top stuffing (savory herb flavor.) I recommend covering it for the first 20-30 minutes of baking, and it did not take an entire hour to bake, more like 40 minutes.

Coney Island Sauce

We had this tonight with our hot dogs and my husband loved it. He normally does not eat chilli on his hot dogs, but he said it was the best hot dog chilli he has had! I would not go that far, but it was okay. Will definitely make again.

Sour Cream Burgers

Overall, I liked these. They were very moist, so the patties tended to fall apart. My husband said the onion flavor was too overpowering, but he is the type that likes just beef burgers with salt and pepper; anything else and he says it starts to taste like meatloaf. Thanks for the recipe.

Crumb-Coated Chicken Thighs

This was just okay, though the chicken was very moist. I left the salt out and we did not miss it; also doubled the bread crumbs. My husband said he liked it, but I don't think he would be heartbroken if I don't make it again.

Taco Salad I

This was good. I made a few changes - I used half a bottle of fat free Catalina dressing and hot chili beans to add some zing. Also, I did not mix all the ingredients together so the lettuce would not get soggy. We just assembled the salad when it was time to eat. Added chopped onions to the toppings and used corn chips instead of tortilla chips. This is a great recipe to "clean out the fridge."

Salsa II

This salsa is excellent. It does take awhile to make, but the end result is worth it. Even my father liked it and he is very hard to please. The only thing I changed was I used fresh garlic instead of garlic powder and added it when I added the onions. Thanks for a wonderful recipe!

Seven Layer Dip I

I made this for our July 4 cookout and it was a hit. I did make a few changes. I added taco seasoning to the beef, left out the guacamole and olives and added shredded lettuce. This makes a huge dish, but the leftovers were great - we just made a huge taco salad. This is a great recipe that you can change to accomodate anyone's taste.

London Broil I

My husband and I really enjoyed this dish. I marinated it for almost 24 hours and even though this is a cheap cut of meat, it was very tender. The only thing that I would do differently is use low-sodium soy sauce. Soy sauce tends to make food salty and overpowers the other flavors. Thanks for a great recipe.

Easy Salsa Meatloaf

This recipe was very good and so easy to make, much easier than traditional meatloaf. The leftovers were even better the next day. The only thing that I would do differently is use more salsa and put more cheese on the top when almost done to melt. My husband still had to put ketchup on his, though. Thanks for a great recipe.

Baked French Toast

I was very embarassed today when I served this to overnight guests for breakfast. We all ended up eating something else. I followed the recipe exactly and it was a soggy mess that just fell apart. Way too much liquid. Would not reccommend this recipe.

Baked Asparagus with Balsamic Butter Sauce

This was okay. I love asparagus, but my husband is not a fan, so I keep experimenting with new recipes. He took a few bites of this one - which is good for him. The soy sauce was a bit over-powering. I would suggest using less soy sauce or more balsamic vinegar.

Garlic and Onion Burgers

These were just okay. I added some bread crumbs because the mixture was a bit too wet. My husband and I both thought that the Italian seasoning was too strong and overpowering. Next time I will do as others suggested and replace it with steak seasoning. But the onions and garlic added great flavor.

Ham Salad Spread

I liked this, my husband did not. He said it "tasted funny." I didn't have celery, so I left that out. Maybe the celery would have helped it, and next time I may try dijon mustard to add some zip to it; it was a little bland. Thanks for a good recipe.

Ranch-Style Buttermilk Dressing

Peanut Butter Easter Eggs

These were easy to make. I added a little more milk and peanut butter to make it easier to mix.(Hint: Use your hands - it is messy, but much easier.)They are very sweet, so next time I would make them smaller. One or two bites is enough for my sweet tooth. Thanks for a great and easy recipe!

West Tennessee Corn Bread

This cornbread was fantastic and easy to make. I did not change a thing and it turned out perfect. My husband and I ate almost the entire pan in one sitting....wonderful with loads of butter! Thanks for a terrific recipe ~ definitely a keeper.

Ukrainian Meat Filled Cabbage Rolls

This recipe was time-consuming but well worth it. I was surprised at how much my husband raved about it (he even took leftovers for his lunch.) I served it with steamed broccoli and dilled new potatoes. I made some changes though. I added garlic to the onions, and mixed tomato paste with the chicken stock and then made the sour cream sauce with that - which was very good. The savoy cabbage was easy to work with. Next time I will add a few more seasonings to pork mixture. Thanks for a great recipe.

Honey Mustard Dressing I

All in all, this recipe was good and very simple to make. The soy sauce adds an interesting twist, but the dill weed was a bit overpowering. Next time, I will use just a pinch of the dill weed.

Pleasant Pork Chops

My husband and I enjoyed this recipe. I just simmered them for about 35 minutes and they turned out super-moist. Next time I will add mushrooms and more garlic to the sauce and cut back on the paprika. The paprika was overpowering. Definitely recommended, but do use a thick cut pork chop.
