Roasted Vegetable Medley

These were amazing! I made this dish when I had a friend over for dinner. She kept eating and eating them even after we were finished with dinner and I had to print the recipe for her or I don't think she would have left. Only change was I added a red onion to the mix. Loved that it was a room temperature dish. Didn't have to worry about keeping it warm while I cooked the rest of the dinner.

Oven Barbecued Chicken

I've been making this chicken for years. It is the recipe for barbecued chicken that is in the old (circa 1960) Better Homes and Gardens cookbook. (The one with the red checkered cover, although my cover has been gone for years). The only difference is that the BH&G's recipe had celery which you brown along with the onions. My kids were raised on this chicken and it was requested often in our house. Seeing the recipe here reminded me how good it is. I'm going to have to make it again soon now.

Favorite Barbecue Chicken

I'm giving this a 4 because I needed to add something to really give this a barbecue taste. I followed the directions and tasted the sauce before putting on the chicken and I knew it was missing something. I added a few drops (maybe 1/2 teaspoon) of liquid smoke. That was it. Now it tastes like barbecue sauce and is 5 stars! Yummy! Will make this again.

Slow Cooked Corned Beef for Sandwiches

Followed recipe exactly except cut in half and used crockpot. Loved, loved, loved it. Having the last sandwich for lunch today. I'll have to make another one soon!!!

Sausage and Bean Ragout

This was really good. I did not use the hamburger, just sausage, but a little over a pound of it. Also, used dried basil as others did. It made a lot of soup, but sure was yummy and great on a rainy day in the Northwest!

Cream Cheese Squares

These are delicious! I liked the idea of adding some sweet to it. The only jam I had in the house was a mixed berry flavor, so I added a thin layer on top of the cream cheese before putting the top layer of crescent rolls on. Very yummy! I cut the recipe in half. Otherwise, followed the recipe. I would like to try it with apricot jam. Definitely a yummy decadent dessert!

Sweet Italian Green Beans

Okay. I read another review which indicated that they had used zucchini. And guess what? I have zucchini by the bushel full right now. So me thinks, why not. It was yummy. I followed all of the rest of the recipe, except cooked the zucchini with the onions and garlic, then added the tomatoes and herbs. It was just yummy. The brown sugar adds a nice sweetness to the dish. I loved it and will definitely make again.

Mom's Best Macaroni Salad

This is really good. I did add a couple of eggs and I didn't use the sugar. Eagle Brand milk has plenty of sugar in it. IMO. The salad was a nice change from the usual. Wouldn't make it often, but a nice different salad. BTW, the recipe is huge, I cut in half and still had enough for 8 people with leftovers (and that included a 16 year old boy that eats like a horse).

Bourbon Spiced Pork with Sweet Potatoes and Apples

This is the first of the new McCormick Spice packets I've tried and it was very good! I loved the spiciness of it. I had one pretty large pork tenderloin (the ones from Costco, you know everything is bigger at Costco). I cooked a little longer at a bit lower temp and used a meat thermometer so I would get the pork just right and it all turned out perfect. The sweet potatoes and apples went so well with it and the sauce with the spices and oj made for a great sauce. I'm excited to try some more of the new spice mixes. Makes doing a nice meal a snap!!

Chili Rellenos Casserole

This was very good and cured my desire for some Chile Rellenos. It is a very easy and quick recipe. I followed some of the other reviewers suggestions. Used 3 cans of chilis, 3 eggs and used enchilada sauce instead of plain tomato sauce. Couldn't see the point of the extra 2 T of milk. Left it out. I topped with a little sour cream and some chopped scallions. This was quite good and I would definitely recommend.

Slow Cooker Pulled Pork

This is an excellent recipe. I added an sliced onion to the crockpot when I began cooking. Just a preference of mine. I've cooked pork in colas before, but the root beer was something new and I had it on hand so thought I'd try it. To those expecting some flavor from it that were disappointed, I think the carbonated drinks have more of a tendency to affect the tenderness of the meat rather than add flavor. It came out very good. I used Sweet Baby Ray's barbecue sauce (my favorite) and it was delicious. I don't think there is much difference between using root beer or some type of cola. Tasted the same. I agree that using a pork tenderloin for this dish is a waste of money. Buy a cheap cut!!! That's what the slow cooker is for.

Oven Fried Parmesan Chicken

This is a really good recipe and I see lots of potential for variations. I made according to the recipe except I used Italian bread crumbs, so the extra seasonings made it really good and perhaps some that thought it needed something more should try that. I used only chicken thighs because that's what I had on hand and it was crispy and smelled soooooo good! I am anxious to try with boneless skinless chicken breasts to be a little healthier. I can't wait to get home tonight for leftovers. Oh, one other thing - I started it out skin side down and turned over about 1/2 way through.

Oven Fried Chicken III

I thought this was great. I too changed the mayo to 1/2 c. & 1/2 c. milk. I also used light mayo. Used Italian bread crumbs. My grandsons loved it. I usually use drumsticks & thighs and I make extra because the leftovers are really good too. It's the best oven fried chicken I've found.

Country Quiche

This was really good. I followed the recipe except for a few things. I used 1 more egg, fat free 1/2 & 12, upped the cheese by about 1/2 more and put in some hot sauce for an extra kick. I did not have any problems with the filling not being perfect for a 9 inch pie plate. It was perfect and made for a nice Sunday morning brunch.

Chicken Delicious

I found this recipe on this site a couple of years ago and have made it several times but never got around to rating it. It is just what the name says. "Delicious". I followed the recipe exactly and it's great, but sometimes if I don't have the right soups I have substituted cream of mushroom for one or the other. I don't think it matters a lot, just get 2 creamed soups in there. I haven't tried cream of broccoli but I think I will next time. I fixed it for my daughter and her family when they came over once and now she is always asking, are you going to make that chicken again? It was so good.

Baked Spiced Chicken

This was really good. I made a few changes based on reviews. I wanted it to be spicy so I only used 2 tsp. of smoked paprika and 1 tsp. of chili powder. Also added some garlic powder just because I use it in everything. I also used boneless skinless chicken thighs which cooked really fast. It was really a nice combination of flavors.

Annie's Turkey Salad

This was pretty good, but I think some of the things I didn't like might have been my own fault. I used dijonaise for the mustard/mayo portion and it turned out a little too mustardy for my liking. I didn't have any sweet pickles, so substituted dill. I did add some celery & green onion. Just didn't seem like turkey salad without it. I will definitely try this again and change the things to more closely match the original recipe. Will get back to you on it.

Harvest Salad

Really good salad. I made some changes just based on the items I had. I used olive oil instead of buying walnut oil. Also, I had a mixed berry jam on hand that worked perfectly. The dressing was outstanding! The tomatoes sounded weird with the other items so didn't used. I love avacados but I thought they tasted a little strange with the dressing, so next time I will not include them. I liked some other suggestions of adding some different fruits (berries or apples). I also like the idea of throwing in some bacon. I will definitely play around with this recipe. It's worth it for the dressing alone!

Apple Crisp II

This was very good and the only reason I gave it 4 stars was because it had way to much sugar. 1/2 cup is plenty and I used granny smith apples which are pretty tart. I did double the topping and it was very good. Also, could see no point to add baking powder and soda, so left it out. I'm not sure what that would have done for it.
