Green Bean Salad

This was really good! It did remind me of the 4 bean salad that my mom used to make. I used Splenda instead of sugar and fire-roasted red peppers instead of pimentos, because that is what I had. Next time I'll cut back the dressing ingredients to about 2/3 because there is a lot more dressing than needed.

Roasted Vegetable Medley

These were amazing! I made this dish when I had a friend over for dinner. She kept eating and eating them even after we were finished with dinner and I had to print the recipe for her or I don't think she would have left. Only change was I added a red onion to the mix. Loved that it was a room temperature dish. Didn't have to worry about keeping it warm while I cooked the rest of the dinner.

Spicy Lime-Cilantro Marinated Flank Steak

This wasn't horrible, but considering all of the ingredients, I was expecting more. The Marinated Flank Steak recipe on this site is much better. I won't bother with this one again.

Classic Peanut Butter Cookies

Had to make changes, so that's why I deducted a star. I added more flour and more Peanut Butter (about 1/4 each). I used extra crunchy Peanut Butter. They were great, but watch closely - they overcook easily. Also people who said they got 2 dozen cookies must have made some really big cookies. I got four dozen and I don't think the extra flour and Peanut Butter accounted for that.

Sausage Spinach Alfredo Lasagna

Pretty good! Makes a lot and was hard to fit all the noodles in and still fit in a 9 x 13 dish. I did substitute the Italian mixed cheese for the cheddar. Cheddar just doesn't seem to fit right with Italian food. Also used a jar & 1/2 of Classico Roasted Garlic Alfredo Sauce. Will probably make again sometime, but pretty high in fat and calories to eat very often.

Annie's Turkey Salad

This was pretty good, but I think some of the things I didn't like might have been my own fault. I used dijonaise for the mustard/mayo portion and it turned out a little too mustardy for my liking. I didn't have any sweet pickles, so substituted dill. I did add some celery & green onion. Just didn't seem like turkey salad without it. I will definitely try this again and change the things to more closely match the original recipe. Will get back to you on it.

Baked Spiced Chicken

This was really good. I made a few changes based on reviews. I wanted it to be spicy so I only used 2 tsp. of smoked paprika and 1 tsp. of chili powder. Also added some garlic powder just because I use it in everything. I also used boneless skinless chicken thighs which cooked really fast. It was really a nice combination of flavors.

Zucchini Patties

These turned out really good. I made a few changes as per other reviews. Used some Italian bread crumbs in place of some of the flour (about 1/2 & 1/2). Used Italian mix of grated cheese because that's what I had on hand. Also about a tsp. of red pepper flakes for a kick. Also, coated in the bread crumbs before frying in olive oil. They were yummy and see lots of possibilities for sauces to put on them. I just ate them plain the first time but I have leftovers and think I might try a little salsa and sour cream on them.

Scalloped Corn and Broccoli

This was very good. I used fresh broccoli instead of frozen. Left out the sugar. Sauteed a shallot in butter and added along with a little (maybe 1/4 cup) fat free 1/2 & 1/2. Turned out yummy. Will make again.

Chicken Delicious

I found this recipe on this site a couple of years ago and have made it several times but never got around to rating it. It is just what the name says. "Delicious". I followed the recipe exactly and it's great, but sometimes if I don't have the right soups I have substituted cream of mushroom for one or the other. I don't think it matters a lot, just get 2 creamed soups in there. I haven't tried cream of broccoli but I think I will next time. I fixed it for my daughter and her family when they came over once and now she is always asking, are you going to make that chicken again? It was so good.

Marinated Flank Steak

This is a truly wonderful way to do Flank Steak. I tried another recipe from this site recently and was very sorry that I had not used this one again. I decided I would not use another but this one. It is perfect just as is. I'd give it 6 stars.

Carol's Chicken Salad

I thought this was really good. I left out the fruit and cheese, because I was making for sandwiches. I put a slice of Swiss cheese and some lettuce on the sandwich. I love water chestnuts so I really appreciated them in this salad. It was good just eating alone also.

Honey Baked Chicken II

This was good. Nothing spectacular but good. I also cut the butter in half and still it was pretty greasy when done. I used chicken thighs and realized at the last minute that I didn't have any curry so I added some hot sauce. I'll try again when I have the curry and maybe use boneless skinless breasts to cut down on the greasiness.

Grilled Salmon I

Excellent! Followed recipe except used olive oil instead of vegetable. Cooked on foil on the grill. I only marinated for about 20 minutes because it was a last minute decision, but I saved a little marinade aside to pour over fish when done. Next time I'll marinate longer because I'm sure it would be even better, but it was yummy this way too. I made with the roasted asparagus from this site. I'm trying to get more fish and vegies into my diet, so this will be a regular on my menu.

Baked Asparagus with Balsamic Butter Sauce

This was a great side dish along with a piece of salmon. Very healthy dinner. I switched the amounts on the balsamic and soy sauce as many reviewers suggested because I love balsamic and soy sauce can be a little salty. I will make this one often as long as I can afford the fresh asparagus.

Country Quiche

This was really good. I followed the recipe except for a few things. I used 1 more egg, fat free 1/2 & 12, upped the cheese by about 1/2 more and put in some hot sauce for an extra kick. I did not have any problems with the filling not being perfect for a 9 inch pie plate. It was perfect and made for a nice Sunday morning brunch.

Oven Fried Chicken III

I thought this was great. I too changed the mayo to 1/2 c. & 1/2 c. milk. I also used light mayo. Used Italian bread crumbs. My grandsons loved it. I usually use drumsticks & thighs and I make extra because the leftovers are really good too. It's the best oven fried chicken I've found.
