Favorite Barbecue Chicken

I'm giving this a 4 because I needed to add something to really give this a barbecue taste. I followed the directions and tasted the sauce before putting on the chicken and I knew it was missing something. I added a few drops (maybe 1/2 teaspoon) of liquid smoke. That was it. Now it tastes like barbecue sauce and is 5 stars! Yummy! Will make this again.

Kelsey's Favorite Stuffed Green Peppers

In reading the reviews I felt this recipe needed a lot of help. I almost feel that I should just put a new recipe on and not bother rating this one; but here goes anyway. I sauteed the onion in a couple of tablespoons of olive oil, then added some fresh garlic (about 1 clove). When that was soft but not brown, I added a cup of long cooking rice and 1 3/4 cups of chicken broth (adds so much flavor). I cooked and then cooled some. I then added this to the hamburger (raw). Stirred about 2/3 of a 24 oz jar of my favorite spaghetti sauce and mixed all together. I also added pepper at this point. (Didn't feel it needed salt because of the other additions). Filled 3 peppers halved. Place in a 9 x 13 dish and spooned the rest of the spag sauce on top. I put a little water in the bottom of the dish so the peppers wouldn't burn. Baked this at 325 for about 45 minutes covered, then uncovered and topped each with some mixed Italian Cheese. Didn't measure, just a nice handful on each pepper. I baked for an additional 20 minutes until the cheese was melted and starting to brown. I realize that this has totally altered the original recipe but it was so good and really not that much work. In fact I think this method was easier than the original. I just could see no reason to blanch peppers and double cook hamburger. My baking time was a little longer but I wasn't in a hurry so it worked out great. Smelled so good while baking and tasted so good when eating!!!

Beef Bourguignon II

Didn't really care for. Maybe it was the wine. I don't really care for red wine (even "good" red wine) so that was probably the problem. So if you are a red wine lover, go for it.

Jasmine Rice

This is really good rice. I love the flavor of the bay in it. I did change slightly. Used only chicken broth. I used about 1/4 cup onion and about 1/2 cup peas and cut the recipe for the rice and broth by a 1/3. Still more than 4 servings. Must be some really big servings.

Fish Roll-Ups

This was absolutely amazing. I followed the recipe with very few alterations. Used scallions for the onions and I forgot to buy the parsley so I used dried parsley. Also used fresh garlic instead of powder. This was definitely a restaurant quality fish dinner. I wanted to practice it before making for company. It passed with flying colors and will definitely be making it for them. Thanks for the great recipe!

Hash Brown Casserole I

Ed Zieba's Famous Family Pork Chops

Sorry - these weren't that good! Followed the instructions exactly and there was no liquid left in the dish and the chops were pretty unflavorable. Won't bother with this one again.

Green Rice I

This was not a very good side dish at all. Very dry after baking. No flavor even though I added some spices to try to up the flavor and cooked the rice in chicken broth. Just bland and a lot of ingredients and work for just rice. I would have preferred just plain rice.

Chicken with Stuffing

Oh my gosh! This was Thanksgiving in a crockpot!! I did follow the advice of some other reviewers and added an onion and some celery along with some seasonings. S & P and poultry seasoning. I used the cornbread stove-top stuffing but mixed with low salt chicken broth to cut the fat. I cooked on low for 4 hours and it was perfect. Served with some cranberry sauce along side and some fresh cooked vegetables and it made a Sunday dinner feel like a holiday. Loved it!

Old-Fashioned Swiss Steak

Great recipe. I used tomato sauce instead of juice like many others suggested. It's what I had on hand. I doubled the recipe and the leftovers were great too. I will definitely make again.

Delicious Ham and Potato Soup

This was absolutely yummy! I did make a few changes but used the recipe for the basis. Instead of bouillon, I used 2 cans of low salt chicken broth. I sauteed the onion & celery in a little olive oil (also threw in a handful of shredded carrots). Then added the potatoes, ham and broth (and a little garlic, salt and pepper) and cooked for awhile until the vegies were about done. I made the roux using 1% milk and added about a 1/2 to 3/4 cup of shredded sharp cheddar cheese. Then added to the soup and cooked for a little longer. This was absolutely delicious. It made a lot of soup and I am alone, so froze it in single containers so that I can take it to work for lunch. I love cooking things that I can then save myself the work on work days but still have a good meal. Thanks for the recipe.

Bratwurst Stew

One of the best recipes I've made from this site. The changes I made were very few. I browned the brats, then removed and sauteed the carrots, onions and celery. Also added about a tsp. of minced garlic. I also added 2 small Yukon Gold potatoes chopped up. It was a very yummy soup. I will definitely make it again. I think it would be good with Kielbasa. Next time I think I might try using boneless skinless chicken breast as the meat base.

Slow-Cooked Short Ribs

This was pretty good. I followed the recipe exactly. I didn't care for the vinegar taste. Would prefer a more beef gravy taste as I get in another recipe for short ribs. It was okay though.

Sweet Italian Green Beans

Okay. I read another review which indicated that they had used zucchini. And guess what? I have zucchini by the bushel full right now. So me thinks, why not. It was yummy. I followed all of the rest of the recipe, except cooked the zucchini with the onions and garlic, then added the tomatoes and herbs. It was just yummy. The brown sugar adds a nice sweetness to the dish. I loved it and will definitely make again.

Mexican Bean Salad

This was a very good salad with a bit of a difference because of the Mexican spices. I did cut the oil & vinegar in half. Left the rest of the dressing ingredients the same and it was perfect. Left out cilantro, because I don't like it. I'm taking it to my work picnic this week. We'll see if it gets as good of reviews as I think it will.

Chuck's Favorite Mac and Cheese

This was dry even after I added a little milk as was suggested by others. Just didn't care for it. I'm surprised by all the high ratings. I guess some people have never had really good mac & cheese.
