Mom's Baked Egg Muffins

I loved these. Didn't use the maple syrup though. I've made these several different ways. Different meats (or no meat) and different cheeses. Yummy!

Slow Cooker Corned Beef and Cabbage

This is great and satisfying when you are craving that annual corned beef! I did put the cabbage in for the last three hours. I like it really done!

Cream Cheese Squares

These are delicious! I liked the idea of adding some sweet to it. The only jam I had in the house was a mixed berry flavor, so I added a thin layer on top of the cream cheese before putting the top layer of crescent rolls on. Very yummy! I cut the recipe in half. Otherwise, followed the recipe. I would like to try it with apricot jam. Definitely a yummy decadent dessert!

Amish Breakfast Casserole

I made this for breakfast this morning and loved it. I cut the recipe in half except I used 5 eggs as others had suggested. Also, used mozzarella instead of swiss because I didn't have any and it was a last minute decision to make it. I cut the cook time to 30 minutes because I halved it and it was perfect. I definitely do again and I think it would be great with spicy sausage also. Yum!

Chili Rellenos Casserole

This was very good and cured my desire for some Chile Rellenos. It is a very easy and quick recipe. I followed some of the other reviewers suggestions. Used 3 cans of chilis, 3 eggs and used enchilada sauce instead of plain tomato sauce. Couldn't see the point of the extra 2 T of milk. Left it out. I topped with a little sour cream and some chopped scallions. This was quite good and I would definitely recommend.

This was pretty good, however, the Grilled Salmon I on this site is the best I have found, so I have to rate this a little lower. Good - not great!!

Buttermilk Wheat Bread

Oh my, very good bread! Soft and fresh tasting. Makes great toast. I did adjust the yeast to 1 Tbsp. and the salt to 1 1/2 tsp. Also, used bread flour. Perfect.

Slow Cooker Pulled Pork

This is an excellent recipe. I added an sliced onion to the crockpot when I began cooking. Just a preference of mine. I've cooked pork in colas before, but the root beer was something new and I had it on hand so thought I'd try it. To those expecting some flavor from it that were disappointed, I think the carbonated drinks have more of a tendency to affect the tenderness of the meat rather than add flavor. It came out very good. I used Sweet Baby Ray's barbecue sauce (my favorite) and it was delicious. I don't think there is much difference between using root beer or some type of cola. Tasted the same. I agree that using a pork tenderloin for this dish is a waste of money. Buy a cheap cut!!! That's what the slow cooker is for.

Kidney Bean Salad

This is a recipe from my childhood that I had totally forgotten. Never had it with celery, but I'll give it a try. My mom always chopped sweet pickles for it, so a little bigger chunks than using relish. I'll try it though. And I think that the mayo needs to be added a little at a time. It shouldn't overwhelm the salad which sounds like a problem that many were having. It should just coat everything, not get soupy!!

Black Bean and Corn Quesadillas

These were yummy, yummy!! No changes needed. I did have canned black beans with jalapenos on hand, so I used those and they added a bit more of a kick. Put a little low fat sour cream on top. Really good meat free meal. I will definitely make these again and again!!

Orzo with Parmesan and Basil

I made this to go along with some salmon for dinner last night. It was very good. I followed the recipe exactly except I cut it in half. The basil did seem to be quite strong. I think next time I'll try another reviewer's idea and leave out the basil and add mushrooms & baby spinach. Sounds good that way.

Cod with Italian Crumb Topping

Really good. I followed the recipe except I used Italian bread crumbs so I left out the extra Italian seasoning. I did the mayo lemon thing and think that's definitely the way to go. Also, breaded both sides and baked on a rack over a cookie sheet. Yummy, yummy, yummy!!!!

Easy Slow Cooker French Dip

I've made this a few times, but had never reviewed. I just made again yesterday and determined I really needed to review. It is such a simple recipe, and yet the flavor is so good. I didn't change a thing (a rarity for me). The beer gives such a nice tang in the background. I sometimes don't bother with the sandwich, just serve with mashed potatoes and vegies and my family loves it!!!! Another bonus, it makes the house smell so good!!!!

Sausage and Bean Ragout

This was really good. I did not use the hamburger, just sausage, but a little over a pound of it. Also, used dried basil as others did. It made a lot of soup, but sure was yummy and great on a rainy day in the Northwest!

Cottage Dill Bread

This is the best bread I've ever made in my bread machine. I followed the recipe except I didn't have any dried minced onion (used onion powder) and used dill weed instead of seed. Yummy, yummy. Light and very soft bread. Makes really good toast and great sandwiches. Love it!!! Also forgot to say the yeast measurement is definitely wrong. Used 2 1/4 teaspoons. Just right.
