London Broil II

Reviewed: Apr. 23, 2014
I loved, loved, loved this marinade. I followed recipe but did add about 1 Tbsp. Worcestershire & the juice of 1 lemon & the zest. Yum! I want to mention too that the confusion about flank steak vs. London Broil. Flank steak is the cut of meat, London Broil is a method of cooking flank steak. Most London Broil recipes call for the thin cut of steak to be rolled and cut like a pinwheel and broiled (sometimes stuffed). This really is just a recipe for marinated flank steak, not a true London Broil. Still Yummy whatever it's called :)

Harvest Salad

Reviewed: Dec. 16, 2013
Really good salad. I made some changes just based on the items I had. I used olive oil instead of buying walnut oil. Also, I had a mixed berry jam on hand that worked perfectly. The dressing was outstanding! The tomatoes sounded weird with the other items so didn't used. I love avacados but I thought they tasted a little strange with the dressing, so next time I will not include them. I liked some other suggestions of adding some different fruits (berries or apples). I also like the idea of throwing in some bacon. I will definitely play around with this recipe. It's worth it for the dressing alone!

Apple Crisp II

Reviewed: Sep. 30, 2013
This was very good and the only reason I gave it 4 stars was because it had way to much sugar. 1/2 cup is plenty and I used granny smith apples which are pretty tart. I did double the topping and it was very good. Also, could see no point to add baking powder and soda, so left it out. I'm not sure what that would have done for it.

Green Bean and Mushroom Medley

Reviewed: Sep. 30, 2013
This is excellent just as it is!!! I used carrots that were small jullienes because I had a bag on hand and they worked great. I steamed the green beans (fresh) and just added the carrots the last couple of minutes because they were so small. It worked great and was a very pretty combination of colors and tasted grrreeaaatt!

Sweet Dinner Rolls

Reviewed: Jul. 29, 2013
I made these yesterday and they were absolutely wonderful. I made them into round dinner rolls instead of the crescents. The only problem I see is to not eat too many. Verrrrryyy tasty - especially warm out of the oven. And I love doing them in the bread machine - so easy!

Mom's Stovetop Pork Ribs

Reviewed: May 28, 2013
This was okay. Too much oregano and the meat seemed dry to me. I used Country Style Ribs. I have much better recipes for these, so probably won't make again.

Chef John's Baked Eggs

Reviewed: May 14, 2013
These were very good. I used pizza sauce and went heavy on the red pepper because I like the spice. Pretty rich breakfast. I wouldn't eat it often but was a nice treat.

Mom's Best Macaroni Salad

Reviewed: May 14, 2013
This is really good. I did add a couple of eggs and I didn't use the sugar. Eagle Brand milk has plenty of sugar in it. IMO. The salad was a nice change from the usual. Wouldn't make it often, but a nice different salad. BTW, the recipe is huge, I cut in half and still had enough for 8 people with leftovers (and that included a 16 year old boy that eats like a horse).

Barbecue Ribs

Reviewed: May 6, 2013
I have been looking for a really good recipe for ribs! This is it!! I'm so happy. I did the boiling method. Sorry to the reviewer who said never boil ribs. I've actually done that before with other rib recipes and found that it really tenderizes them and it does cut some of the fat. So I'm going against that advice because it works for me. I didn't have any chili sauce so substituted some Sweet Baby Rays and some hot sauce. The sauce makes it. I grilled them but I'm sure if the weather was bad that the oven would work for finishing them off. The sauce is killer!

Super-Simple, Super-Spicy Mongolian Beef

Reviewed: Apr. 27, 2013
Wow! Really good. I doubled recipe but only added 1 tsp. red pepper flakes for the whole batch and that was plenty spicy for me. Also used top sirloin instead of flank steak because that's what was in the freezer. It was a hit and I will make again for sure. Yummo!

Barbeque Chicken

Reviewed: Apr. 15, 2013
This was a really good sauce recipe and I liked the cooking method. I was worried about the high starting temp and the long slow cooking but it made the chicken very moist and tender. The only change I made was I didn't put the water in. After reading the review that the sauce was too thin, why add water? Duh! My sauce came out perfect and loved the flavor.

Red Potato Salad

Reviewed: Apr. 15, 2013
This is great potato salad. I have an old standby that I usually make, but thought it would be fun to try something different and I wasn't sorry that I chose this one. I cut the recipe in half (didn't want a huge amount in case I didn't like it) but otherwise followed the recipe exactly. My dash of hot sauce was more of a glug, but I like the spice. I definitely like using less mayo. I think I will use the dressing recipe even on my old standby recipe.

Oven Roasted Teriyaki Chicken

Reviewed: Jan. 21, 2013
I really liked the way this turned out. I was afraid of it because it smelled very vinegary, but that dissipated in the baking. I did change the Splenda to 1/4 cup brown sugar (don't like fake sugar) and I didn't cook the sauce ahead of time. I marinated the chicken in the sauce for a couple of hours then baked all together. It was very good.

Bourbon Spiced Pork with Sweet Potatoes and Apples

Reviewed: Oct. 18, 2012
This is the first of the new McCormick Spice packets I've tried and it was very good! I loved the spiciness of it. I had one pretty large pork tenderloin (the ones from Costco, you know everything is bigger at Costco). I cooked a little longer at a bit lower temp and used a meat thermometer so I would get the pork just right and it all turned out perfect. The sweet potatoes and apples went so well with it and the sauce with the spices and oj made for a great sauce. I'm excited to try some more of the new spice mixes. Makes doing a nice meal a snap!!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Sep. 12, 2012
I agree this was very good, but a little salty. I think next time I'll try using and onion and my own seasoning instead of the soup mix because that has so much salt in it. The red wine, soy sauce combination made an excellent gravy though. I'll make again with modifications.

Make Ahead Lunch Wraps

Reviewed: Sep. 10, 2012
I gave this 4 stars based on the fact that I also made a few changes after reading reviews. I sauteed an onion in olive olive and then added the rice and used chicken broth to cook. I like the flavor that the broth adds. After the rice was cooked I added taco seasoning to it. The rest of the recipe I followed. I cut the recipe in half and I did get 10 wraps and they are very generous sized. Now it's a 5 star recipe. Yum! Who says that you can only eat them for lunch? Made a great dinner the first day and the rest went in the freezer for lunches.
