Red Garlic Mashed Potatoes

Gave 3 stars because the sugar makes them too sweet. But use milk instead of cream, add more garlic and skip the sugar and the recipe is 5 stars all the way!

Summer Pepper Salad

I made this last night and my friends liked it a lot. I added a few shakes of Italian seasoning and a little pour of balsamic vinegar (just to taste). Excellent salad, very light and very easy to make. Yummy. I will make this again.

Caribbean Fish with Pineapple Salsa

The pineapple salsa amazing! I didn't think I'd like it, but I couldn't stop eating it. It's great with tortilla chips, and of course on the fish.

Thai Pineapple Chicken Curry

Followed previous reviewers advice and only used 1 can of coconut milk, it tasted good but there wasn't enough sauce for all 2 cups of rice. I used 3 tsp. of red curry powder but it wasn't spicy at all, needed a lot more. I added carrots and water chestnuts. Even with my mistakes this was an excellent recipe, very quick and easy to make.

Chicken Scampi II

Have made this twice now, two different ways. The first time, I made according to the directions with a few changes (half the butter, extra garlic, and white wine). My boyfriend loved it, and said I could make it again. The second time I didn't use the stove. My grandmother poached the chicken in the oven, and I made the sauce in the microwave. Only change I made was to add extra garlic. Put everything but the lemon juice in the microwave for a couple of minutes, stirring every 30 seconds or so. The family enjoyed it, and asked me to make it again. Easy recipe that is easily modified.

Avocado and Tomato Salad

Definitely simple. I followed other's suggestions and found the cilantro to be most important. Without the cilantro I think it would have been too bland and boring. Otherwise, excellent recipe and everyone loved it. Easy to make, and it is going in my recipe box to be made again and again!

Garlic Cheddar Chicken

Loved it! I was only making it for 2 so I didn't measure out any of the ingredients quite exactly. I used Italian seasoned bread crumbs, and instead of putting the butter and garlic on the stove I threw it in the microwave, and it cooked just fine. After the chicken had been breaded, I sprinkled extra parmesan and cheddar cheese on top. (Of course I didn't measure in the first place so maybe it wasn't extra!) Also, I used a sharp cheddar for a little extra flavor. I loved how easy this recipe was, and it will be a definite repeat in my house.

Chocolate Strawberries

The first time I made chocolate strawberries without the shortening, the chocolate broke off as I was eating them. With the shortening it made the chocolate a little more maleable and it didn't break off as easily. I definitely recommend using the semi-sweet chocolate chips, and I used the microwave technique rather than the double boiler (as I hate my electric stove). Heat at 50% for 20s, and stir after every 20s. I will definitely use this recipe again, and again! Everyone has loved it :)

Cranberry Apple Bread

I made this bread for Christmas dinner, and had rave reviews. In fact, my grandmother _told_ me that I would be making it again today for her to take home. It was a very moist and yummy bread. Our family loves the tartness of cranberries with the sweetness of the bread. After reading previous reviews, I let the apples and sugar sit while I mixed the dry ingredients, and then added the oil and egg. Also, I added a little extra cinnamon, and some nutmeg. Wonderful recipe! Will be making this often.
