Aunt Teen's Creamy Chocolate Fudge

I know it can get confusing reading through all these reviews, wondering who is right and what modifications really are needed ... But I made this fudge five times in the last couple of weeks, so here's the down low. 1) Make it as indicated; there is no need to tweak ingredients or the order to have good fudge. 2) Make it several times. That's what it takes to get familiar with how long it has to cook. The problem is, some of us have different definitions of what a "full boil" is, so you'll need to figure out for yourself what that is (is it when you see some bubbles? Lots of bubbles? The MOST bubbles?) and then start timing. If you cook too long, it ends up hard and crumbly and somehow less tasty. If you cook too short, it will be squishy. I wait until I see a moderate amount of bubbles (I've done it 5 times, so I kind of know by now how it should look), then cook for about 5.25 minutes. Really, experience is going to be your best friend here.

Black Magic Cake

This is a really good, moist cake. The only downfall I have found is it is a little tender for cupcakes. Still works and tastes great as a cupcake, just doesn't hold together quite as well as some.

Bandito Beans

My first time making baked beans, I chose this recipe because it seemed foolproof and used a slow cooker. I followed it pretty much as written, except for halving the sausage (though I wished later that I hadn't because it would have been meatier), and I substituted a can of navy beans for the limas because it seemed a bit weird to have all those green vegetably beans in there. And I cooked it for about 10 hours instead of 5 hours -- a girl's gotta work all day, after all! Turned out fine though and I got several compliments.

Hot Artichoke and Spinach Dip II

Caramel-Filled Chocolate Cookies

Now THESE were good! I picked the recipe because it was a little different from your average cookie. Easy to make and the caramel on the inside was great. I left off the last step of dipping in nuts because I didn't have time for that. I think they would have been even better with some mini chocolate chips added into the batter, since mini chocolate chips make EVERYTHING better!

Mango Muffins

I had some mangoes to use up and found this recipe. I am not a big mango fan and didn't much like the smell of them when I was dicing them up. So I did not have high hopes for these. But, they turned out great! They taste sort of like cinnamony banana bread with peaches. I made the recipe as indicated, except I did sub half wheat flour for the all-purpose flour and used a little more banana and a little less oil than called for.

Orange Breakfast Rolls

Just finished making and eating these. I doubled the batch for 12 rolls, which filled a 9x13" pan. These were delicious; my husband and I both enjoyed them. I may make them again. The time consuming part was rolling out each of the rolls into strips, and then letting them rise, which took well over an hour.

Washabinaros Chili

Though it takes more expense and preparation than some, this is my new favorite chili recipe. I was going to take it to a cook-off but got there too late to enter. :( Don't be afraid to add all the "hot" ingredients -- cayenne, habaneros, wasabi. Unless you have a sensitive, bland tastes, this moderately spicy chili won't be too hot for you. I'm sort of a middle-of-the-road hotness person myself (always get "medium" in the salsa aisle) and it was just fine. I liked all the different flavors in it. I will say that after it simmered awhile the flavors were less discernible, which kind of disappointed me. But I'm about to put all the ingredients on my shopping list again so we can make it again! Oh, and seriously, you HAVE to drain the fat after cooking the meat ... can't imagine how greasy the chili would be if you didn't.

Rick's Special Buttercream Frosting

And so ends my quest for the perfect strawberry frosting. I needed a fluffy yet substantial frosting for a child's birthday cake, and I modified this one in the following ways to make a great (IMO) strawberry frosting: reduced the powdered sugar slightly, substituted butter for half the shortening, substituted a couple tablespoons of pureed strawberry for a couple tablespoons of the whipping cream, and added several tablespoons of strawberry Nesquik. Also substituted a little almond extract for the vanilla. Yeah, it doesn't sound like much of the original recipe was left, but it really was a great base ... all I did was tweak it a tad based on the reviews and added my strawberry flavoring. Recommended! Will make again. Does have a fatty shortening-like feel, but it's nothing you won't find in any store-bought decorated cake frosting and so much yummier!

Blueberry Cream Muffins

I made both these muffins and the Blueberry Orange muffins from this site. Four out of five people preferred this recipe. I found these muffins to be richer, tastier, and better looking. I did tweak the recipe slightly, based on others' reviews -- my goal was more to make a good muffin than to be able to review this recipe exactly as written, but the changes were minor and the results were good enough to review! My changes were: added 1 cup of blueberries, 1/4 cup of sugar, a little orange zest, cinnamon, nutmeg, and a cinnamon sugar topping. I recommend stirring the sour cream into the liquid ingredients before adding them to the dry ingredients. I had started out adding the sour cream separately as the recipe indicated, but soon felt like that would lead to overmixing, since the sour cream gets lumpy when added by itself. I did have problems with some muffins turning out underbaked in the center -- so a light touch on the mixing and as long a baking time as possible is recommended. Anyway, I love them and so did everyone else! Will make again.

Chocolate Chip Kiss Cookies

Very, very, very good! I chose this recipe because I was looking for a way to use up some giant M&Ms someone had given me after Easter. So I substituted those for the chocolate kiss in the middle. Delicious! My batch made about 36 cookies, so I guess my cookies were a little small. I also refrigerated the dough blobs on the cookie sheets for a few minutes before baking to make sure the cookies didn't spread, though I'm not sure that was necessary.

Amish White Bread

Very yummy and easy. The texture reminds me of a roll or even french bread. I made mine with only 2 tablespoons of sugar (per loaf). Also, mine only took 2.5 cups of flour (per loaf), instead of the 3 called for. I will probably make this again. If I don't, it is only because there are lots of other good bread recipes out there.

Restaurant-Style Prime Rib Roast

This turned out well for us. I was nervous about cooking a $40 piece of meat. I followed the directions exactly. The only problem was that our roast got a little overcooked. I calculated it at 140 minutes, since our roast was 7 lbs, and even took it out 20 minutes early when the meat thermometer said 125. It sat for maybe 20 min before we cut it and ended up being more of a medium well - mostly brown with a pink center. Not the medium rare we were going for, but delicious nonetheless. We had it with horseradish.

Supreme Strawberry Topping

Delicious! Just made this to top Chantal's Cheesecake. I followed the suggestions of another reviewer: chopped all strawberries; cooked 2/3 of them, breaking them up while cooking; combined cooked and uncooked. Yummy and easy! Had to make myself stop eating it so I would have enough for that big ol' cheesecake.

Chantal's New York Cheesecake

This was great. I topped it with the Supreme Strawberry Topping from this site (VERY good). I did modify the crust to include sugar and cinnamon, and left out half of the flour, as per some other reviews. And put a pan of water on the rack below it in the oven. Otherwise, I just tried not to overmix and followed the instructions. Now I don't know if I peeked into the oven one too many times or what, but it couldn't have been cooling for more than a couple hours when it cracked like the Grand Canyon. Maybe I should've greased the sides or ran a knife around it. Oh well, I've never understood the anti-crack mania, since I'm just serving it to family here at home and it tastes just as good! The one issue I did have: the middle of the cheesecake tasted better than the outer part! It was all good, but the middle was just noticeably better -- more moist and sweet. Don't know how I could've overbaked it or anything, since I followed the instructions .... Oh well, I'll probably make it again, next time I get the cheesecake urge.

Cinnamon-Swirl Raisin Bread

yummy!! I made pretty much as indicated. Used golden raisins instead of the dark kind. Mine baked for 40 minutes, and I put foil over the top for the last 10 or so to avoid over-browning. Not sure why it says this recipe can be ready in 1 hr 10 min, because it took me about 3.
