Simple Whole Wheat Bread

Good but not amazing. I replaced half the white flour with wheat and left out the second addition of honey to keep the bread from being very sweet. Brushing butter on the crust turned out great.

Quick and Easy Alfredo Sauce

I'm not an alfredo sauce expert, but this was wonderful! I used this recipe as a base for crab alfredo -- added garlic cloves and some onion and squash (sauteed separately to keep them from disintegrating during the cooking process). Then added canned crab and served over pasta with bacon bits on top ... YUM! Even made it with the reduced fat (NOT fat free) cream cheese and skim milk and it tasted fine. Will use this often.

Never Fail Applesauce Spice Cake

Delicious! Just finished a piece and thought I'd go review it. I followed the recipe pretty much exactly as written, except substituted walnuts for pecans throughout. Also used unsweetened applesauce, since the recipe didn't specify. And added a bit of allspice to the frosting -- like the AllSpice Cream Cheese Frosting recipe from this site. I liked this cake best after it had sat in the fridge a couple of days -- the cake was denser. The best part though was the browned/buttered nuts in the frosting.

Chicken Garlic Pizza

I expected more from this recipe, especially since it had received such good reviews. My husband rated it at only 2 or 3 stars. Changes I made were: I seasoned and stir-fried my chicken, added some green bell pepper that needed using up, used dried cilantro, red onion instead of green, and added some mozzerella on top. None of those changes were substantial deviations from the original recipe though. (Also tried a Jiffy crust for the first time, which we didn't care for, but tried to evaluate this recipe apart from the crust). All in all, it was just OK for us. I won't make this recipe again, but may try to build on the concept.

Amazing Whole Wheat Pizza Crust

This pizza crust is great! Neither I nor my husband could find any fault with it. I am pretty new to yeast breads and followed the recipe exactly, except for cutting it in half to make just one crust. I did have to add a tad more flour while kneading and I used a pizza stone. I topped the crust with one of the alfredo sauce recipes from this site, and added some chicken and veggies. Yum! Will definitely be using this recipe again.

Awesome Ham Pasta Salad

This was very good and flavorful. I followed the recipe pretty closely -- my proportions may have differed somewhat and I made a few minor substitutions. My husband only rated it at 3 stars, but I give it a low 5.

Yogurt Whole Wheat Quick Bread

Once it cooled, this bread was great! It is unusual. It has the texture of a quick bread (nice and moist) but a taste more similar to yeast breads. It is more bland that most quick breads, but has a great subtle taste. Will most likely make again. (Mine took only 35 min to bake.)

Easy Guacamole

Easy Granola Bars

These were very good, though I wasn't totally blown away. Anyway, I made these pretty much as called for, just varied the mix-ins somewhat and added a pinch of salt and some spices. That long review a page or two back by wife2maleRN was very helpful. I baked mine in a 11x17" jelly roll pan, lined with foil that was heavily buttered. When it came out, I scored it with the pizza cutter & flipped it onto another sheet of foil to cool. After cooling, it easily broke into nice clean bars. My husband and I took them camping this weekend and ate every one. His only complaint was that they should be chewier -- but maybe if I had used the 9x13" pan as called for, the thicker bars might've been chewier. May make again if occasion warrants. Cost-wise this doesn't beat store-bought by much, since nuts aren't cheap.

Apple Enchiladas

Good, but exceedingly sweet and I like sweets as much as anyone. Also probably would've been better with an apple filling made from scratch, rather than the canned apples.

Good Old Fashioned Pancakes

I needed a fluffy pancake (at my husband's request) and one that did not require buttermilk (didn't have any on hand). This was perfect! My husband is happy and even now is polishing off pancake number 7 (at least). Will make again!!!!!1

Taco Seasoning I

I was so excited to make my own taco seasoning! Now I can save that 50 cents at the store, ha ha. It tasted a lot like store-bought, though not identical. I may consider leaving out a little bit of the salt next time and some might not like the hotness of the red pepper. Will definitely be using this in the future!

Marinated Pretzels

Except for leaving out the dill weed (didn't have any), I followed the recipe pretty much exactly. Used sourdough pretzels that came in bite-size pieces - nicer than breaking up big ones. Took these to a women's event where they went unnoticed amidst the other snacks for awhile, but eventually people got started on them and ate most of them. My husband didn't like them, but that's just him. If I make these again, I would use less garlic. Also I found I liked these better after a day or two.

Peppermint Brownies

I am excited to be the first to rate this recipe, with the five stars it deserves! These are quite rich and the peppermint adds an interesting twist. I followed this recipe as written, except for the chocolate glaze on top -- instead of melting the chocolate with shortening, I just sprinkled the chocolate chips on the hot brownies and spread them once they melted. The only difficulty I had was in crushing the peppermints -- used a hammer and a plastic bag, which soon got holes in it and spread peppermint powder everywhere! I also felt these were best after being stored in the refrigerator overnight. Highly recommended.

Rice-Stuffed Cornish Hens

Well, I made this dish for Thanksgiving today, since it is a nice size for my husband and I. We really liked the rice stuffing (5 stars for that), but it was way too mushroomy for me (subtract a star for that). Could have done with half the mushrooms. I won't go into the problems I had cooking the Cornish hens, since they aren't really the fault of the recipe. Let's just say it had a lot to do with inexperience and chicken skin and half-frozen birds. It will be a dark day before I venture to cook whole poultry again.

Potato Bread III

This was delicious! I made it today to go along with Thanksgiving dinner. Very moist. Would make again. One thing I might mention is that I used only 5 cups of the 6.5 cups of flour called for and even that was stretching it. Not sure why. Maybe because it's so dry out here in West Texas!?

Sweet Potato Corn Bread

I was delighted to find this use for my sweet potato leftovers! Halved the recipe, baked it in an 8x8 pan, and baked it for 22 minutes. It was delicious. The sweet potato taste is really not very obvious. My only complaint was that it was somewhat crumbly -- I like to pick my cornbread up in my hand and eat it with butter on it -- but my husband preferred the texture to other recipes, so I think it's a matter of preference. He said it was the best cornbread I had ever made (not that I make it very often). Anyway, I am keeping this one and would definitely make it again if I am ever again in the unique situation where I simultaneously have leftover sweet potato and a need for cornbread.
