J.P.'s Big Daddy Biscuits

Reviewed: May 10, 2007
YUMMY! I didn't even add all the milk and the dough was very sticky -- quickly absorbed all the floury on my floury surface when kneading, and then was difficult to cleanly cut into circles so I ended up with drop biscuits. That was the only problem I had though. Except for the problem of not being able to stop eating them.

Chocolate Chip Kiss Cookies

Reviewed: May 6, 2007
Very, very, very good! I chose this recipe because I was looking for a way to use up some giant M&Ms someone had given me after Easter. So I substituted those for the chocolate kiss in the middle. Delicious! My batch made about 36 cookies, so I guess my cookies were a little small. I also refrigerated the dough blobs on the cookie sheets for a few minutes before baking to make sure the cookies didn't spread, though I'm not sure that was necessary.

Soft Chocolate Mint Cookies

Reviewed: Apr. 29, 2007
Love the addition of mint to chocolate! I made these exactly as written, only added about 1/3 package of mini chocolate chips so there would be little bits of firm chocolatey goodness after cooling. The texture of these was a non-factor to me.

Creamy Banana Bread

Reviewed: Apr. 29, 2007
This turned out well, though not stupendous enough to take the place of my other banana bread recipes. It is somewhat unique though, so I may make it again. My husband loved it and devoured most of the loaf but then he had skipped lunch so was very hungry. I confess that I did accidentally double the bananas and the vanilla, which I'm sure made the end result more banana-ey, but I'm rating it anyway since it wasn't THAT big of a change...

Pesto Tuna Salad with Sun-Dried Tomatoes

Reviewed: Apr. 26, 2007
Very good. Very rich -- more like a dip than a sandwich filling. Followed recipe exactly -- even went out and bought sundried tomatoes and pesto for the first time in my life. I'd cut down on the pesto a little next time.

Overnight Caramel Pecan Rolls

Reviewed: Apr. 24, 2007
I'm fairly new to yeast breads and this was my first attempt at cinnamon rolls from scratch, trying to please my husband who believes that the best cinnamon rolls come from a can. These turned out very good. I chose this recipe because it had specific overnight instructions. I didn't change anything major -- did increase the caramel slightly and baked in two round cake pans. I did find that these took an hour and a half to rise in the morning, even in a cold oven with a pan of warm water. The husband verdict -- very good but more like "honey buns" than cinnamon rolls... Whatever!

Delicious Ham and Potato Soup

Reviewed: Mar. 11, 2007
Turned out pretty decent. Even my potato-soup-hating husband proclaimed it "pretty good."

Easy Never Forgotten Guacamole

Reviewed: Dec. 17, 2006
Very good. Will make again. Didn't follow proportions exactly, just estimated all the ingredients together. Used fresh onion and added some lime juice.

Sweet Potato Corn Bread

Reviewed: Dec. 3, 2006
I was delighted to find this use for my sweet potato leftovers! Halved the recipe, baked it in an 8x8 pan, and baked it for 22 minutes. It was delicious. The sweet potato taste is really not very obvious. My only complaint was that it was somewhat crumbly -- I like to pick my cornbread up in my hand and eat it with butter on it -- but my husband preferred the texture to other recipes, so I think it's a matter of preference. He said it was the best cornbread I had ever made (not that I make it very often). Anyway, I am keeping this one and would definitely make it again if I am ever again in the unique situation where I simultaneously have leftover sweet potato and a need for cornbread.

Potato Bread III

Reviewed: Nov. 23, 2006
This was delicious! I made it today to go along with Thanksgiving dinner. Very moist. Would make again. One thing I might mention is that I used only 5 cups of the 6.5 cups of flour called for and even that was stretching it. Not sure why. Maybe because it's so dry out here in West Texas!?

Rice-Stuffed Cornish Hens

Reviewed: Nov. 23, 2006
Well, I made this dish for Thanksgiving today, since it is a nice size for my husband and I. We really liked the rice stuffing (5 stars for that), but it was way too mushroomy for me (subtract a star for that). Could have done with half the mushrooms. I won't go into the problems I had cooking the Cornish hens, since they aren't really the fault of the recipe. Let's just say it had a lot to do with inexperience and chicken skin and half-frozen birds. It will be a dark day before I venture to cook whole poultry again.

Peppermint Brownies

Reviewed: Nov. 20, 2006
I am excited to be the first to rate this recipe, with the five stars it deserves! These are quite rich and the peppermint adds an interesting twist. I followed this recipe as written, except for the chocolate glaze on top -- instead of melting the chocolate with shortening, I just sprinkled the chocolate chips on the hot brownies and spread them once they melted. The only difficulty I had was in crushing the peppermints -- used a hammer and a plastic bag, which soon got holes in it and spread peppermint powder everywhere! I also felt these were best after being stored in the refrigerator overnight. Highly recommended.

Award Winning Chili

This turned out more like a stew than traditional chili. It wasn't spicy at all. On the plus side, it was colorful!

Marinated Pretzels

Reviewed: Oct. 7, 2006
Except for leaving out the dill weed (didn't have any), I followed the recipe pretty much exactly. Used sourdough pretzels that came in bite-size pieces - nicer than breaking up big ones. Took these to a women's event where they went unnoticed amidst the other snacks for awhile, but eventually people got started on them and ate most of them. My husband didn't like them, but that's just him. If I make these again, I would use less garlic. Also I found I liked these better after a day or two.

Taco Seasoning I

Reviewed: Sep. 24, 2006
I was so excited to make my own taco seasoning! Now I can save that 50 cents at the store, ha ha. It tasted a lot like store-bought, though not identical. I may consider leaving out a little bit of the salt next time and some might not like the hotness of the red pepper. Will definitely be using this in the future!

Good Old Fashioned Pancakes

Reviewed: Sep. 17, 2006
I needed a fluffy pancake (at my husband's request) and one that did not require buttermilk (didn't have any on hand). This was perfect! My husband is happy and even now is polishing off pancake number 7 (at least). Will make again!!!!!1

Apple Enchiladas

Good, but exceedingly sweet and I like sweets as much as anyone. Also probably would've been better with an apple filling made from scratch, rather than the canned apples.

Easy Granola Bars

Reviewed: Sep. 3, 2006
These were very good, though I wasn't totally blown away. Anyway, I made these pretty much as called for, just varied the mix-ins somewhat and added a pinch of salt and some spices. That long review a page or two back by wife2maleRN was very helpful. I baked mine in a 11x17" jelly roll pan, lined with foil that was heavily buttered. When it came out, I scored it with the pizza cutter & flipped it onto another sheet of foil to cool. After cooling, it easily broke into nice clean bars. My husband and I took them camping this weekend and ate every one. His only complaint was that they should be chewier -- but maybe if I had used the 9x13" pan as called for, the thicker bars might've been chewier. May make again if occasion warrants. Cost-wise this doesn't beat store-bought by much, since nuts aren't cheap.

Easy Guacamole

Reviewed: Aug. 12, 2006
Though not a guacamole connoisseur, I thought this was pretty good. However, when my husband tasted it, he thought something was missing so he kept adding stuff to try to add more "oomph" to it.
