Chili Rellenos Casserole

I've made this several times and it's been a huge hit all around. Everyone who tries it wants the recipe. I used some of the earlier suggestions - added an extra egg, left out the extra milk, used a smaller pan. Any kind of cheese works well. Chopped fire roasted chiles add a nice taste and are easy, also chopped up several green onions and layered them on top of the chiles, and added chili powder and cumin to the flour. Made it once for a friend with a gluten intolerance and subbed cornstarch for the flour - worked great. Love this recipe!

Hot Chocolate Mix II

this is a huge hit at my house. added the whole container of chocolate mix (26 oz??), used french vanilla creamer, substituted Splenda for half the sugar and threw in a tsp. of cinnamon. yum!

Easiest Ever Fruit Cobbler

really good and really easy. my only advice would be to make sure you spread the batter evenly over the fruit, because if there's too much in one area it gets kind of gloppy. will make again.

Beezie's Black Bean Soup

this was a hit with my whole family. I used a lot of the other suggestions, which I think really helped. I soaked the beans overnight and then cooked them separetely. They were done before I even put them in the crockpot. Left out the celery and the rice, used white instead of red onion, chipotle powder instead of jalapenos, doubled the lentils and threw in some chopped spinach at the end. Will definately make again - thanks!

Black Bean Lasagna II

this is really good and a nice compromise for my half veggie/half meat eating family. I used red enchilada sauce instead of half of the tomato sauce and it had a nice kick to it. Will definitely make this again.

Tofu and Veggies in Peanut Sauce

I combined a lot of changes other people made. I froze the tofu first, steamed the broccoli separately and added garlic, ginger and sesame oil. Just great! I made a quadruple recipe for a potluck and there was none left at all.
