Amazing Crab Shells

I made the filling this weekend and as others suggested, used it in puff pastry shells. It was ok, not enough seasoning for me. I may try the filling again, but will use the food processor to make the shrimp and finer and then use as a filling in wonton wrappers and then bake. The recipe is a good base, just needs some tweaking for my household tastebuds.

Cornbread Stuffing Southern Style

This was great! Everyone loved the new stuffing this year and while I always make stove top for my picky brother, he even wanted more of the cornbread stuffing and said I didn't need to make stove top next year! I did only use 2.5 cups of liquid and then put it back in the 9x13 at 350 for about 20 minutes to harden the top a little bit.

Grilled Chicken Noodle Soup

This is a really easy basic recipe. I've made this a couple of times and found that I like to leave the chicken whole and then cut/shred it after it has boiled with the rest of the soup before adding the noodles. I don't care for mushrooms, so I don't add those and instead add whatever frozen veggies I have left in the freezer.

Chewy Coconut Cookies

I don't know if I did something wrong, but these just spread and looked very unappetizing (but did taste great). I won't be trying this recipe again, but used it to make my own recipe for cookies in the mini muffin pan that come out like almond joy bars.

Peanut Butter Cup Cookies

This were so quick and easy. My husband said, "I feel bad saying this, but these are better than the ones your friend makes!" I accidentally left a few out that didn't make it into gift bags when we left for the holiday and after three days, they were still moist!

Antojitos Minis

I used many of the other reviewers suggestions and just cut my tortillas into quarters - added a little pam to the bottom of the muffin cups and then added my filling (used drained black beans and a can of petite diced tomatoes with chili, then added some green onion). Put some cheese on top and stuck them in the over at 350 for 15-20 minutes. The extra edges of the tortillas made them easy to take out and made a good presentation. I just served them with a cilantro dip - everyone loved them. I think I will try making these next time with 6 in. tortillas cut in fourths and placed in my mini muffin pan to feed a larger crowd. A great recipe to use up whatever you have left in the kitchen!

Pumpkin Bread IV

I made oversized muffins with this recipe with a cream cheese frosting and they came out great. They had a mild pumpkin taste and were nice and moist for quite a few days. This has replaced my old recipe for pumplin bread.

Pecan Pie V

I would give this 10 stars if possible. I have given this recipe out so many times and it is now the pecan pie recipe my mother uses for holidays as well. This is just the right amount of sweet and buttery flavor and so easy to make!

Mouse's Macaroni and Cheese

After trying many other recipes, this is my go-to one! The recipe is easy and unlike other recipes, does not come out of the oven swimming in pools of butter! I have tried other seasoning, adding tomato, and different crumb mixtures for on top - this is our favorite!

Love these! I made these for a tailgate party and the guys loved them! I made sure not to boil the mixture and my bars came out just gooey enough for my football fans. The few I took into the office disappeared before 10am! I used milk chocolate chips and doubled the amount.
