Chicken with Bouillon

Chocolate Trifle

I used Kozy Shack chocolate pudding, negating the need for the condensed milk, some of the whipped topping and the pudding mix. An easy shortcut that helped cut the sweetness a tad. Also added strawberries and topped with Andes mint pieces.

Awesome Bow Tie Pasta

I used a can of diced tomatoes (seasoned with oregano and basil), adding some salt. This was great, even better the next day (or 2 or 3). It makes more than 8 servings, I'd say. I added black olives the second day, as it needed a little ... something. I also doubled the green onions, as they disappear in this massive dish. *ETA Try using a smaller pasta shape; works best with the quantities of the other ingredients in the recipe

Easy Baked Tilapia

so easy and really tasty. i used frozen cauliflower/broccoli/carrots and made half of the servings the original recipe calls for, but it baked for about the same time as the full recipe. served with baked potatoes.

Asian Beef with Snow Peas

authentic tasting. i doubled the sauce and used dried ginger as someone else recommended. i used 2 tbsp ginger but found it a bit much (although my husband said it was perfect). also used different veggies--carrots, celery, onion and red pepper. a great base recipe and a wonderful sauce.

Honey Garlic Vinaigrette

yummy as written, just wish it could be slightly healthier. i might try others' suggestions of 1/2 cup vinegar and 1/2 cup oil next time. served it on a salad of mixed greens, craisins, almonds and mandarin oranges, and it went perfectly.

Italian Dressing Mix

this was great. i didn't have celery salt so i omitted it, used half the regular salt, and used olive oil instead of canola. my garlic salt also had parsley in it (mccormick's) but i still added the parsley the recipe called for as well. it wasn't too much, tasted great.

Japanese Zucchini and Onions

i liked this a lot, but instead of teriyaki (which i thought i had on hand but apparently didn't), i used more lite soy sauce and a tiny bit of sesame oil. i'd say if you don't have sesame seeds, you can leave them out without compromising taste. also, i lightly sprayed the pan with oil spray rather than the amount it called for.

Honey Baked Chicken II

made a combo of the suggestions here. i used 3 boneless, skinless breasts. i reduced the margarine by half and used smart balance. i used dijon instead of regular mustard. i used one teaspoon of curry and 1/2 a teaspoon of garam masala. i omitted the salt. baked 30 mins covered with foil, then 20 uncovered. it was fab! served with brown rice and a salad.

Herbed Sweet 'n' Sour Chicken

my husband and i both liked it. made it with brown rice. i omitted the cayenne b/c i'm not a spice fan. also eyeballed the allspice and pepper. i used a little less oil than it called for and could probably do even less next time ... it's got plenty.

Healthy Turkey Loaf

i doubled the recipe as was suggested and added a handful of shredded carrots. it was great! very easy. i made it in a loaf pan in the toaster oven, 350 for 40 minutes. also, i omitted the red pepper (the ones at the store looked gross) and doubled the yellow. next time i'll try leaving out 1 egg.

Fantastic Black Bean Chili

loved it. changes: i used 28 oz. of crushed tomatoes, a small can of sweet corn, a shake or two of cumin, and doubled the chili powder. i subbed kidney beans for one of the cans of black beans (just for variety). this made probably 7 or 8 large servings.

Oven Roasted Potatoes

i used 4.5 (one was small) yukon potatoes, cut them into smaller pieces w/ skin on, added them to a ziploc with the oil and the spices, and then mixed. i actually just used penzey's seasoned salt, which had all of the spices listed in this recipe, but unfortunately, i used way too much -- 4 tsp. it was quite salty (my own fault for just adding up the other quantities on the original). next time i'd use 2 tsp. and go from there. despite being too salty, they were fantastic and the original recipe is probably perfect.

easy and delicious. i made this with boneless, skinless breasts. instead of rubbing with oil, i sprayed them with cooking spray. this is also good served cold the next day. would be good over a salad.

Sloppy Joes

we loved this. i used ground turkey and i cut the brown sugar by a quarter. also, i didn't have an onion so i used a little extra onion powder, and i ran out of a BBQ sauce so ended up using about 3/4 as much as listed. i also added a small splash of liquid smoke. will definitely make this again.

Spinach Lasagna II

made this with jarred sauce, 9 noodles and added penzey's pasta sprinkle on each layer. added a little extra parmesan on top. this was my first lasagna and it worked great! also, used fat-free ricotta. the taste did not suffer.

i used slightly less sugar and used half and half instead of evaporated milk. this came out really well! next time i might cut back a bit on the butter. this frosts more than a dozen cupcakes.
