Asian Beef with Snow Peas

Reviewed: Jun. 30, 2008
authentic tasting. i doubled the sauce and used dried ginger as someone else recommended. i used 2 tbsp ginger but found it a bit much (although my husband said it was perfect). also used different veggies--carrots, celery, onion and red pepper. a great base recipe and a wonderful sauce.

Lemon Pepper Green Beans

Reviewed: Jun. 10, 2008
very good! i used frozen beans and steamed them in the microwave. my husband said any time i make green beans, i should use this recipe.

Award Winning Soft Chocolate Chip Cookies

Reviewed: May 25, 2008
when they said soft, they meant SOFT. i thought the taste was great, but note that these are not chewy (as i assumed) ... they're literally soft. i made half a batch (all on one cookie sheet) and they baked about 14 mins. i used double-strength vanilla from penzey's.

Garlic Broccoli

Reviewed: May 18, 2008
we loved this. i put the broccoli in the microwave with a little water for about 5 minutes and did the rest per the recipe.

Balsamic Glazed Carrots

Reviewed: May 16, 2008
delicious, just gave it 4 stars because the cooking time was off. i'd say on the stovetop it could take between 15 and 25 minutes. might try steaming in the microwave first next time.

Easy Baked Tilapia

Reviewed: Apr. 29, 2008
so easy and really tasty. i used frozen cauliflower/broccoli/carrots and made half of the servings the original recipe calls for, but it baked for about the same time as the full recipe. served with baked potatoes.

Slammin' Salmon

Reviewed: Mar. 3, 2008
i was not that into this but my husband certainly was, and he's the fish eater in the house, so we'll go with his opinion over mine. i left out the peanut oil altogether and used the foreman grill.

Awesome Bow Tie Pasta

Reviewed: Feb. 27, 2008
I used a can of diced tomatoes (seasoned with oregano and basil), adding some salt. This was great, even better the next day (or 2 or 3). It makes more than 8 servings, I'd say. I added black olives the second day, as it needed a little ... something. I also doubled the green onions, as they disappear in this massive dish. *ETA Try using a smaller pasta shape; works best with the quantities of the other ingredients in the recipe

Lemon-Pepper Salmon

Reviewed: Jan. 15, 2008
this was really good, and i'm not usually a salmon fan. i didn't have any cilantro so i substituted dried parsley. also, instead of the 2 tbsp of oil, i sprayed the pan with olive oil spray for a second or two. there's plenty of fat in this dish between the oil, salmon, and butter!

Chocolate Trifle

Reviewed: Jan. 1, 2008
I used Kozy Shack chocolate pudding, negating the need for the condensed milk, some of the whipped topping and the pudding mix. An easy shortcut that helped cut the sweetness a tad. Also added strawberries and topped with Andes mint pieces.

Chocolate Chip Pumpkin Bread

Reviewed: Dec. 9, 2007
good, not very pumpkin-y. i used butterscotch chips instead of chocolate chips, which gave it a great taste. for me, this made two small loaves and 12 small muffins. the breads baked 45-50 mins and the muffins about 20 minutes (they were baked in a regular-size muffin tin but only filled the cups halfway).

Roasted Chicken Salad Bites

Reviewed: Dec. 2, 2007
i too bought a pre-roasted whole chicken for this recipe, but the only choices were cranberry or apricot roasted chickens. this added a bit of an odd taste, so if you're making this with a store-bought roasted chicken, go for one without a fruit flavor. it wasn't bad, just conflicting tastes. otherwise, a good recipe.

Curried Coconut Chicken

Reviewed: Nov. 28, 2007
this was pretty good, but i agree that it needed a little something. i made the curry the way cook stephanie suggested (6/11/07). i had 1.2 lbs of chicken to work with so i used less coconut milk and sugar, the full can of stewed tomatoes, and left out the tomato sauce. it was still plenty tomato-y. make sure you use a deep skillet, as this recipe has a ton of liquid.

Onion Salmon

Reviewed: Nov. 20, 2007
note: this review reflects using a lot of the suggestions, not the basic recipe. i did this in the oven as suggested, and i also added olive oil and lemon juice. it came out pretty well! needed some salt though, and i'm guessing it would need it even when making the recipe exactly as the original.

Honey Chicken Stir-Fry

Reviewed: Nov. 13, 2007
pretty good, didn't make very much sauce, though. we had to use extra soy sauce to moisten the rice. we used low-sodium soy sauce to make it slightly healthier.

Lemon Chicken Tenders

Reviewed: Nov. 11, 2007
i cut down on the sugar, using about 1/4 of a cup, because i thought 1/2 a cup would be overpowering. turns out it could have used the full 1/2 cup the recipe called for. despite that, my husband said this was "a keeper," and he rarely likes chicken.

Vanilla Pumpkin Pie

Reviewed: Oct. 31, 2007
this recipe is extremely simple. however, it does need some tweaking. after following the directions exactly and reading the reviews after, i would say definitely wrap the crust in foil (mine burned and i only had it in for 28 minutes of the specified 40 at the end), do up the amount of vanilla, and do use more spice. not a bad recipe, just not as flavorful as you might expect from pumpkin pie.

Pumpkin Cookies I

Reviewed: Oct. 9, 2007
great tasting cookie! they're very soft. i took others' suggestions of doubling the cinnamon (definitely do this) and halving the chips (could probably go either way). however, most people said these cookies didn't spread ... mine DEFINITELY did, and they took more like 20 minutes to bake. i omitted the salt by mistake but they came out fine without it.
