Harvest Sweet Potato Soup

i was very impressed with this soup. it was kind of a pain to use the blender, but otherwise, this was easy to make, smelled good and is filling. i added a little extra salt and basil because the amounts seemed to small, but they're just probably fine as written too.

Zucchini Saute

delicious and healthy. i substituted sliced black olives for the mushrooms, which i'm sure gave it a different taste than the original recipe, but it was still great. also didn't use salt and pepper, and i used halved grape tomatoes.

Tuna Pasta Salad

this recipe says it's 6 servings. only if it's being served as a side dish ... i'd say this is 3 servings, tops. the only thing i did differently was adding red onion. i used lite italian dressing.

Best Salmon Bake

i found this to be a bit bland, but i'm not much of a salmon person. my husband does like salmon, and he said this is a great recipe. i scaled it to 2 servings and it said a pound of salmon -- this is probably more like 3 servings. next time i might sprinkle some onion powder with the salt and pepper. i put some lemon juice on it before baking.

Veggie Quesadillas

i made some changes -- omitted the mushrooms, forgot to spray the tortilla tops before baking, used whole wheat tortillas. i also didn't get salsa/sour cream for dipping, although that would have been great. i liked these but next time will probably not use whole wheat tortillas.

Tortellini Soup

giving this a 3 not for taste but because the recipe is wrong. the taste was actually just fine. but this says it makes 4 servings (no way ... MAYBE 6 but probably more like 8) and while it has garlic and parmesan in the ingredients, they are not in the directions. i used low-sodium broth and garlic powder instead of the minced (since i didn't know when to put it in). i served the parmesan on top at the end. it was yummy but the recipe itself needs clarification.

Chicken and Vegetable Stir-Fry

good recipe but needs more flavor. i added soy sauce to the rice at the end and mixed it in with the chicken/veggies. that helped. also, i made mine in a wok.

Pumpkin Chocolate Chip Cookies III

these came out very cake-like. i did 3 things differently: used applesauce instead of oil, didn't dissolve the baking soda in milk (just added both separately) and used 1.5 cups chocolate chips instead of 2 cups. i think 2 cups would have been too many.

Pumpkin Pancakes

this review is for just the pancakes (i didn't make the syrup): they were pretty good but next time i may add more pumpkin. the taste was subtle. i also sprinkled cinnamon sugar on top as they were cooking. and i didn't separate the eggs, just added them together.

Hazelnut-Crusted Salmon

I wasn't as into this as my husband was, but I'm not a huge salmon fan to begin with. I followed the original recipe except: 2 tsp fresh tarragon was replaced with 2 tsp dried tarragon; orange zest was replaced with rehydrated orange peel from penzey's; and i forgot the salt/pepper. added the salt after it came out -- no need for pepper! it looked very pretty. next time i'll try almonds. might enjoy that better.

Orange Chocolate Chip Cookies

these are yummy. i used penzey's orange peel (which you rehydrate before using), didn't use the pecans and accidentally forgot 1/3 of the chocolate chips (don't ask). they still came out fantastic -- not sure all those chips are even necessary. great, easy recipe!

Capers and Halibut

i used halibut chunks and half the butter. my husband liked this even though he isn't a caper fan. i also left out the pepper (by mistake) and salt (on purpose). still good though. i could see lemon pepper working here.

Salmon with Pineapple Tomato Salsa

the salsa was yummy, although my husband wasn't into the pineapple (the lime juice seemed to neutralize it a little too much for him). i actually think the salmon cooking time was a bit too long. otherwise, great recipe! the only change i made was using tomatoes on the vine instead of plum tomatoes.

Avocado Stuffed Yams

this rating is for my modified version, NOT the original recipe! i based what i did on the other reviews: microwaved the yams and omitted the cheese, oil (to make it less fatty) and cilantro (didn't have any). it came out very good and the flavors worked together, but i could see the cheese adding another dimension -- will try that next time! don't think i missed anything by not using oil or cilantro, though.

Baked Ziti II

a good basic recipe. add spices if your sauce is plain-ish. i cut back on the mozzarella by 1/4 and could probably have cut back on the ricotta too. i used fat-free ricotta and it was great. next time i'll add garlic powder.
