Green Bean and Feta Salad

Reviewed: Mar. 4, 2010
YUM! Super easy, and super delicious. I did not have red wine vinegar, so I used all rice vinegar, cut down olive oil to 1/4 C, and added a splash of balsamic vinegar along with the Wocestershire. Will definitely be making this again!

Chicken Enchiladas II

Reviewed: Mar. 31, 2010
OK, I had to make a couple of changes because I really wanted to try this recipe, but I didn't have any "leftover" chicken. So, I threw some chicken breasts in the slow cooker with some enchilada sauce. And, because it was 2 lbs of chicken, I doubled the sauce. Other than that, I followed the recipe exactly, and it was delicious! I absolutely loved it, and I can't wait to dig in to the leftovers.

Brooke's Best Bombshell Brownies

These are the bomb! Best brownie recipe, ever! This is the only brownie I will make from now on. Truly decadent, rich, dense, and deeply satisfying. Thanks for a fabulous recipe!

Cheesecake Topped Brownies

Reviewed: Apr. 2, 2010
Very good. However, I took one reviewer's advice and doubled the cream cheese topping - NOT NECESSARY! It was way too much, and my brownie did not set in the middle (and I baked it for 1.5 hrs; the edges were starting to burn). But, what did cook, everyone loved. The cream cheese topping is awesome. I topped with a final layer of melted chocolate chips.

Buffalo Chicken Dip

Reviewed: Apr. 18, 2010
This was excellent! I used blue cheese dressing, because that's what I had, and I used a rotisserie chicken rather than canned chicken. I also layered it, because I think it makes it more interesting when it's served. Next time I make it, though, I will leave out the cheddar cheese, this does not need it!

No Bake Peanut Butter Pie

Reviewed: Apr. 18, 2010
Very rich and decadent; tastes like an entire jar of PB was used. Super easy, I will make this again, but only for a crowd of PB-lovers, such as myself.

Honey Brie Spread

Reviewed: Apr. 18, 2010
Sooooo crazy good. I got rave reviews on this one. I added honey and pecans on both the inside and outside of the pastry crust. Even the warmed-up leftovers taste great!

Mexican Bean Salad

Reviewed: Jul. 18, 2010
Very easy and delicious! I didn't change a thing to this recipe. I was taking this to a potluck, and my fridge decided to kick the bucket the morning of, so I threw this together literally in minutes just before I left for the party. Everyone enjoyed it, and several people asked for the recipe. I almost felt bad because it was so easy! I will continue making this; perfect for the summer!

Mexican Wedding Cakes II

Reviewed: Jul. 18, 2010
If I could give this more stars, I would. I took these to a potluck, and people RAVED about them! Some guests were even holding on to the bowl of cookies so they could just keep eating them. Needless to say, the cookies disappeared before the end of the night. Excellent recipe; don't change a thing!

Peanut Butter Popcorn

Reviewed: Sep. 10, 2010
I received this recipe today in my daily email from allrecipes.com, and I had to make it this evening. Crazy good! I only had one bag of popcorn, but otherwise I followed the recipe exactly. Gooey, warm, peanut-buttery delicious.

Banana Banana Bread

Reviewed: Sep. 12, 2010
Made this for a banana potluck, and got rave reviews. Simple, yet delicious. Made four loaves, be sure to leave in for the full 60 minutes (took out the first two at 50 min, after a toothpick test, only to find out that there was still a small area that was undercooked). Followed recipe to a T, next time I may add extra spices (like cinnamon, nutmeg, etc.), just to see what happens.

Fluffy French Toast

Reviewed: Sep. 19, 2010
Awesome batter; the flour really makes this recipe. I have used other breads when I don't have challah, and the batter works with everything. This is so easy, it's my go-to recipe whenever I want to make french toast (or just use up old bread).

Best Marinara Sauce Yet

Reviewed: Nov. 2, 2010
I was making eggplant parmesan and I ran out of the store-bought marinara sauce so I turned to this recipe to get me out of my pinch. I didn't have stewed tomatoes, so I used fire-roasted diced tomatoes, which I had on hand. Other than that, followed the directions to a T, and the sauce came out beautifully. I think I will start making my own sauce more often!

Dirt Cake I

Reviewed: Nov. 7, 2010
I'm from Kansas, and we used to make this ALL the time - it was a standard at parties. We called it "Kansas Dirt." Anyhoo, I have been looking for a recipe similar to what my mom used to make, and this is it! This makes an extremely rich, decadent desert. A small portion goes a long way, but everyone loves it! I use a little less milk and chocolate pudding (instead of vanilla) to make my "mud" thicker.

Mouth-Watering Stuffed Mushrooms

Reviewed: Nov. 8, 2010
These were great! Made them for a party and everyone enjoyed them. Very easy to make, but you want to make them just before serving because they are not so good once they have cooled down.

Good Old Fashioned Pancakes

Reviewed: Mar. 23, 2010
This is the first time I made pancakes from scratch, and they were WAY better than any box mix I have ever used! I followed the recipe exactly, but the batter seemed way too thick so I added in an extra 1/4 C of milk. I also I added in 1 teaspoon of cinnamon (which I always add to my pancakes). This will be my go-to recipe for pancakes from now on.

Marinated Grilled Shrimp

Yum! We really enjoyed this. Very easy to make, and very flavorful. I cooked the shrimp in my George Foreman (too cold outside) and served over spaghetti with marinara sauce. Excellent recipe, I will definitely be making this again!

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Mar. 5, 2010
I used broccolini instead of asparagus, and it was delicious! It was very easy to make, although next time I think I will double the sauce. Definitely brown the butter. Thanks for the great recipe!
