Texas Ranch Potato Salad

Peanut Butter Cake II

I found this cake to be rather dry, and I did NOT think the cake had a strong peanut butter flavor at all. I think I will try another recipe for peanut butter cake. Also, I used the Fluffy Peanut Butter frosting from this site, and I thought the frosting was great!

Fluffy Peanut Butter Frosting

This frosting was fabulous! It has a great peanut butter taste and is not too sweet. I put this on a peanut butter cake, but would like to try it on a banana cake, too. If you like peanut butter, this frosting is one to try!

Szechwan Shrimp

I have made this twice in the past two weeks and both times it was fabulous! The second time I made it for my boyfriend and it was his favorite thing that I have ever cooked for him. I will definitely be making this often. Oh, I triple the sauce and add a bag of frozen mixed veggies. Great over rice.

Herbed Mushrooms with White Wine

We really enjoyed this recipe. I cooked my mushrooms with red wine because that's the bottle that was open, and they were great. They were even good the next day. I will definitely be making this again.

Quinoa and Black Beans

We really enjoyed this. Next time I will add more spices to kick up the taste a bit, but overall a really great side dish (I served it with Ginger Glazed Mahi Mahi from this site).

Gooey Butter Cake III

This recipe was awesome! I had tried this cake several times before at various parties and gatherings, and never knew what it was called. And then, finally, at a recent St. Patty's Day party I overheard someone call it Gooey-sticky cake, so I thought I would give this recipe a try. And it was perfect! It was exactly what I was looking for! BTW, you should DEFINITELY let it set overnight before serving. It is so much better the next day!

Granny Kat's Pumpkin Roll

I really enjoyed this. It was a little bit of work, but I have never made a rolled cake before. I made it for Thanksgiving, and everyone really enjoyed it (although one person said it was too cake-y), and of course their favorite part was the frosting! I'm sure I will be making this again.

Caramel Pecan Pie

This was great! Tasted just like regular pecan pie (in case you are worried that it would be too caramel-y). I made it for Christmas dinner, and it was the first time I EVER made pecan pie, and everyone loved it. My dad even finished it later that night! Very easy, I will definitely be making this again!

Paul's Pumpkin Bars

I'm giving this 5 stars because everyone who tried them loved them. I took them to a holiday party, and everyone raved about them! However, I had one right after I made them, and then another during the party, and each time I felt like I just dropped a lead brick in my stomach. Not sure why, and I probably won't make them again, but, like I said, everyone else loved them. They are very easy to make, so I would suggest trying them out for yourself.

Chicken and Corn Chili

This is such a great dish for a chilly night! I love making it because it's so easy (I have the recipe memorized now), and easily adjusted to fit your own taste. I substitute frozen corn for canned, sometimes use black or kidney beans rather than pinto, and usually add more spices (I love garlic and heat!). Such a classic recipe, I will probably never grow tired of it!

This is such a great treat! I make it every year at Thanksgiving, and people munch on it all weekend long. I do follow a couple of the reviews and add 1/4 C butter and 1 t vanilla to the peanut butter/chocolate mixture.

Butternut Squash Soup

This recipe is fantastic! I have made this soup twice, and everyone who tries it loves it! I must admit that I made a few changes. I roast the squash first, and I add in extra cayenne pepper and some curry powder (I like mine with a little kick). But my biggest change is that I cut down the cream cheese significantly - I only use 4 oz (half of a block), and it comes out perfect. Smooth, creamy, and delicious.

Chuck's Favorite Mac and Cheese

I have had this recipe on hand for a couple of years now, and I just finally got around to making it for a group of friends. They loved it and gobbled the whole pan up in one sitting. Very good, but probably will save for certain occasions.

Peanut Blossoms II

Made these over the holidays this year and everyone loved them. My neice didn't even want the Hershey Kiss in the middle - she just removed it and ate the cookie! Also very easy - the same neice (age 6) helped me make them and really enjoyed rolling the dough into balls and pushing the Kisses into the cookies once they came out of the oven. Will definitely be making these again next year!
