Pumpkin Turkey Chili

Mom's Sweet Potato Bake

I made this years ago when I was living with some friends (during my Hurricane Katrina evac). My friends are not big fans of sweet potatoes, but everyone loved this! I still make it every year during the holidays and always receive compliments.

Apple Cinnamon Oatmeal Bread

What a great way to use up all of those packets of oatmeal that no one eats! I love this recipe not only for its simplicity, but also for its flexibility - you could easily substitute different fruit purees (like pumpkin) and different flavors of oatmeal for a new taste. This is a keeper!

Blackened Chicken

This was very good - the mix of spices made a great rub for the chicken. I did double the spice mixture so that I could really coat each piece of chicken. I loved what searing, and then baking did to the chicken - it was moist and flavorful. Thanks for a wonderful recipe!

Hungarian Mushroom Soup

This was really good. I pureed the soup to make it thicker because I used it as a main course. I'm sure I will make this again, but I might add some meat to it, just for a bit more flavor and a bit more filling.

Slow Cooker Beef Stroganoff I

I'm rating this even though I shouldn't because I didn't follow the recipe exactly. Instead, I substituted 2 cups of milk in place of the cream cheese to make a sort of stroganoff soup (watching the waistline). Also, doubled everything except for the meat, added garlic and 1 lb of lightly sauteed mushrooms. Simple and delicious! Great stroganoff taste without all the calories. Very hearty, don't even need egg noodles (I prefer it without). Thanks for the recipe!

Broccoli with Garlic Butter and Cashews

Yum! Yum! Yum! I loved this recipe! I just got it yesterday, and I tried it last night, and it was soooo delicious. I steamed the broccoli in the mircrowave, and then covered it with the sauce. I also just used 1 Tbsp of butter (didn't see any reason to use more), sauted the garlic in it, and then added the rest of the ingredient. Also, I used peanuts instead of cashews, because that's what I had, and it still came out wonderfully. Next time I will double (maybe even triple!) the sauce and add some chicken to it to make a main course. Thanks for such a fabulous recipe!

Aunt Teen's Creamy Chocolate Fudge

I made this for the first time about a year ago using a candy thermometer, and the whole thing separated and was a mess. I tried it again this year, without the candy thermomter, and followed the directions EXACTLY, and it came out PERFECT!! Totally creamy, melt-in-your-mouth fudge! Very easy when I followed the directions, I will definitely be making this again! 12/10/09 Edit: I tried making this recipe again, and my fudge came out too crumbly and dry. I think I cooked the milk/sugar/marshmallow creme mixture too long. I just want to point out that this recipe produces absolutely delicious fudge, but the recipe is very finicky! You must follow it exactly!

Cake Balls

I couldn't believe it - these were a complete hit! As I was making them, I kept thinking that there was no way anyone could like these, but people raved about them! I used triple fudge chocolate cake with triple fudge frosting and butter pecan cake with buttercream frosting - all boxed. I rarely use pre-made store-bought stuff, but I was in a hurry. Dipped both kinds in dark chocolate, milk chocolate, and peanut butter. I'm planning on taking these to another holiday party. Thanks for the easy and versatile recipe!

Award Winning Soft Chocolate Chip Cookies

Fabulous chocolate chip cookie recipe! The only things that I did differently are that I used 2 eggs and 2 egg yolks (instead of 4 whole eggs) and I omitted the walnuts. This recipe produced a perfect cookie for anyone - ever-so-slightly crispy on the outside, but soft and chewy everywhere else. Totally could not tell that pudding was added to the mix - I'm not sure what it does, but this recipe was perfect. I read other reviews that said the cookies didn't spread, but mine sure did! Also, not sure what other people did to get a crunchy cookie, but I thought this recipe was great. I will always use this one from now on!

Downeast Maine Pumpkin Bread

Awesome recipe! I doubled the recipe and made 3 loaves and 3 dozen muffins. The bread came out delicious and moist. I did top my bread with a butter/brown sugar/cinnamon glaze that just took it to the next level. I will be making this every year. Thanks for the recipe!

Caramel Peanut Fudge

This recipe was awesome! It was very easy to make, and not time-consuming at all, save for waiting for each layer to set. I made this while I was baking a couple of other things to put in gift baskets, so I didn't notice the wait time at all. It came out beautifully, and tastes amazing - I almost couldn't stop myself from eating it! I did follow the advice of other reviewers and replaced the butterscotch chips for the top layer with chocolate chips. The only reason I used butterscotch for the bottom layer was because I already had an open bag. I think if you left them out completely it wouldn't affect the taste too much. Thanks for the great recipe!

Cream Cheese Frosting II

This was O.K. as written, but I prefer to use half the amount of cream cheese, and keep all other measurements the same. This modification is definitely sweeter, but I think the recipe as written allows the cream cheese to be overbearing and it makes me think that it belongs on a bagel rather than my cake.

Butter Cream Frosting II

I just made this to frost a butter pecan cake, and all that I can say is this: Holy Sweet Tooth, Batman! I followed the recipe to a T, but this frosting is crazy sweet. I LOVE sugar, but this was too much. I don't know how this got such rave reviews - other people must love sugar way more than I do.

Moroccan-Style Stuffed Acorn Squash

I think this recipe is amazing! The flavors go great with acorn squash. I left out the raisins and added some curry powder and cayenne pepper for a little extra kick. Made this for Thanksgiving one year, and everyone enjoyed it. This is a very impressive dish that is relatively easy to make.

Grandma's Slow Cooker Vegetarian Chili

This is hands-down the best chili recipe that I have ever come across. I make this all of the time. I use black beans instead of black bean soup, and because it is SO THICK, I typically add 2-3 cups of vegetable stock for a little more liquid. And, if you really want meat, it will taste great in this chili. This makes a ton, but you will not get tired of eating it! I make this at least six times a month, which, for me, is a lot! Always a crowd pleaser, and it's just so easy! Thank you!!

Ranch Burgers

I enjoyed the extra zip that the ranch dressing gave these burgers. I must say that I used turkey and left out the egg and crackers (I never see the need for binders), but, from now on, will always use ranch dressing in my burgers (and meat loaf for that matter)!
