Creamy Peanut Butter Fudge

This fudge was delicious, creamy, and fairly easy to make. It came out on the first try, which is not something I can say for all fudge recipes. I will definitely keep this in my folder.

Cool Whipped Frosting

Chantal's New York Cheesecake

It doesn't get any better than this! This cheesecake always comes out perfect - I follow the recipe exactly, leave it in the oven and DON'T TOUCH IT for 6 hours and it will never crack. Everyone loves this, it is my bf's fave!

Big Soft Ginger Cookies

I just love these cookies! They have the perfect amount of spice - not too much so they are accessible to everyone. They also stay soft and chewy (with a bit of a crisp on the outside). Mine did not come out looking like they do in the picture, instead they looked more like ginger snaps, but they were still delicious. I will be make these again and again!

Easiest Peanut Butter Fudge

This fudge was very good and came out perfect on my first try (I am not always successful at making fudge). However, I must say that "World's Best Peanut Butter Fudge" (also on this site) is still my favorite recipe.

Cookie Balls

These are quite tasty. They are very rich, so you can't eat too many. I made them with the holiday candy cane Jo-Jo's (Trader Joe's version of an Oreo). Although these cookie balls are easy to make, the process is quite time-consuming.

Cake Mix Cookies VIII

Wow! These delivered super moist, chewy cookies. I used a spice cake mix, substituted the butter with 3/4 C pumpkin puree (may explain why they are super soft, but I like them like that!), and omitted the chocolate chips. I topped the cookies with a bit of cream cheese frosting (from this site) that I thinned with some milk. Super easy and super delicious - I will definitely be making these often!

Slow Cooker Turkey Breast

This turkey was fall-off-the-bone too-die-for! Very delicious and very easy. I had a 5.5lb bone-in turkey breast. I coated the inside of my slow cooker and the outside of the turkey with butter, stuffed the cavity with onion and garlic, and let it go. After 7 hours in the slow cooker, I took the turkey out and roasted it for 30 min to crisp up the skin. Everybody loved it! I will definitely be making turkey like this again.

Double Layer Pumpkin Cheesecake

This was pretty good. I only gave it 4 stars, because I followed the recipe and baked it in a pre-made graham cracker crust, and the texture of the cheesecake was different from those made in a springform pan. Also, I did not think that the bottom "plain" layer stood out - it might as well just have been blended with the pumpkin. Also, this makes a lot of filling, I ended up overfilling my pie crust (because I only had one and I didn't want leftover filling), which left cracks on top. I wasn't too worried about the cracks, I just added a dollop of Cool Whip on top and no one noticed (that being said, I did not cover the whole thing with Cool Whip because I think that would have been too much). Still a good recipe, and may be great with a few alterations.

Eggplant Parmesan II

I do not normally care for Eggplant Parmesan, but this was amazing! I made this dish because my boyfriend requested it for Thanksgiving. I did not bother measuring out the sauce and cheese, instead I just went by how much I wanted to put on (I ended up using way more than the recipe called for). I also followed the advice of others and sweated out the eggplant before proceeding with the breading (excellent suggestion), and I baked the breaded eggplant in the oven for about 15 minutes to let them really crisp up - I think that is what makes this recipe. The eggplant is not totally soggy and bitter, and everyone at my Thanksgiving dinner (even the turkey eaters) really enjoyed it. This one is a keeper.

Chocolate Truffle Cookies

HOLY COW! That was my reaction the first time I bit into one of these cookies. I can not begin to tell you the accolades I have received over these little gems. Rich, chewy, chocolate-y; these cookies are amazing. I will definitely be making these a lot more often! Thanks for one of the best recipes I have ever tried!

Iced Pumpkin Cookies

I made these today and they were great! I followed a few of the other reviewers' suggestion and substituted half of the white sugar with brown sugar. I also did not make the icing because it sounded very sweet, and that's not what I wanted. I flattened the cookies with the bottom of a glass dipped in sugar. The cookies are very cakey, moist, and delicious. I'm sure they will be a hit for Halloween.

Fantastic Black Bean Chili

This is a great recipe when I want to include a lot of beans into my diet. Sometime I will substitute one can of black beans with one can of kidney beans just to add a new taste. Super easy and very good.

Mom's Sweet Potato Bake

I made this years ago when I was living with some friends (during my Hurricane Katrina evac). My friends are not big fans of sweet potatoes, but everyone loved this! I still make it every year during the holidays and always receive compliments.

Apple Cinnamon Oatmeal Bread

What a great way to use up all of those packets of oatmeal that no one eats! I love this recipe not only for its simplicity, but also for its flexibility - you could easily substitute different fruit purees (like pumpkin) and different flavors of oatmeal for a new taste. This is a keeper!

Blackened Chicken

This was very good - the mix of spices made a great rub for the chicken. I did double the spice mixture so that I could really coat each piece of chicken. I loved what searing, and then baking did to the chicken - it was moist and flavorful. Thanks for a wonderful recipe!

Hungarian Mushroom Soup

This was really good. I pureed the soup to make it thicker because I used it as a main course. I'm sure I will make this again, but I might add some meat to it, just for a bit more flavor and a bit more filling.

Slow Cooker Beef Stroganoff I

I'm rating this even though I shouldn't because I didn't follow the recipe exactly. Instead, I substituted 2 cups of milk in place of the cream cheese to make a sort of stroganoff soup (watching the waistline). Also, doubled everything except for the meat, added garlic and 1 lb of lightly sauteed mushrooms. Simple and delicious! Great stroganoff taste without all the calories. Very hearty, don't even need egg noodles (I prefer it without). Thanks for the recipe!
