The Real Mojito

Excellent recipe for a very refreshing mojito. Instead of sugar, I used simple syrup. Initially I made the simple syrup, but it kept recrystallizing, so I finally just purchased some (sooooo easy!). Also, my lime tree is not mature yet, and I had some key lime juice on hand from a pie that I made, so I used that. Delicious! Now I need to buy more club soda because I finished the whole bottle. Love to have these while floating in the pool!

Banana Pudding IV

Beer Cheese Pretzel Dip

I will be honest; I did not have high expectations for this one. But what a hit! This was THE hit of my Beer Fest party - people could not believe it was made with beer. This is so awesome with crunchy veggies; I will be making this for all of my summer time parties.

Whole Wheat Beer Bread

This was a very nice quick bread. I used all whole wheat flour (because I did not have any other kind), and it came out perfectly. Soft and chewy; great with honey butter. Oh, and I used Sam Adams Boston Lager to make this. I think it would be even better with a darker beer.

Brownie Frosting

Awesome frosting for brownies. Yes, it is super sweet, but isn't frosting supposed to be like that? Looked gorgeous (smooth and shiny) on my brownies.

Hot Corn Dip

I really enjoyed this. However, I did not use this as a dip; instead, I used it as a filler, along with leftover chicken, for burritos. Yummy!

Sweet and Sour Chicken II

The sauce was a little too sweet for me, but otherwise a good recipe. Next time I may leave out the pineapple juice and just add pineapple to cut the sweetness.

The sauce was good. I would recommend letting the chicken marinate at least 8 hours in the sauce because otherwise it doesn't really soak up the flavors.

Grandmother's Buttermilk Cornbread

I made this twice this week. The first time I made it, the entire pan was gone within an hour. The second batch lasted through two meals. Everyone loves this. First time, I did not have enough sugar, so I only used half, and it came out great. The second time I used the full amount, and, honestly, I can't tell much of a difference. I think it was great both way. Amazing with honey butter. Bakes up with a great crust even without a cast iron skillet. This one is a keeper!

Chocolate Fudge Buttercream Frosting

Chicken Enchilada Slow Cooker Soup

I really enjoyed this soup; light, yet filling (great if you are trying to shed a couple of pounds), and has a good spicy kick. I also liked the ease; just throw it in the slow cooker and let it go. I will definitely be making this again.

Peanut Butter Bars I

Delicious! I used only 1/2 Cup butter, I think 1 Cup would have made them too greasy. I also had graham crackers on hand that I wanted to get rid of, so I just crushed them. It gave the bars I nice crunchy texture. Super easy and great for potlucks or bake sale.

Campbell's® Easy Chicken and Cheese Enchiladas

As written, this recipe is only average. But, if you use Fiesta Cheese soup (instead of Cream of Chicken), throw in some diced bell pepper, and add some cumin, this makes one great, and EASY, burrito (really, it's not an enchilada without the enchilada sauce). Perfect for weeknight when you want to get dinner on the table in 30 min, or if you need to use up some extra chicken.

Favorite Barbecue Chicken

This makes an excellent sauce for chicken. It's almost like a cross between sticky and BBQ chicken. Very easy, and had all of the ingredients on hand; this will become a staple in my house.

Jalapeno Popper Spread

This was very good, but definitely needs to be more spicy. I followed the recipe exactly, and next time I will double the jalapenos. Other than than, this is definitely a keeper - super easy and will be great for potlucks, parties, BBQs, holidays, games, etc.

Grandma Johnson's Scones

So good! I replaced the sugar with 1 cup of maple syrup, added a dash of cinnamon and nutmeg, and reduced the sour cream to 1/2 cup (to make up for the extra moisture from the syrup). So easy and so delicious. I didn't need any butter, jam, or any other toppings, they were amazing on their own. I will definitely be making these again.
