Mediterranean Greek Salad

Baked French Toast

This is very close to Paula Deen's baked French toast recipe, and, as written, is only OK. There was way too much liquid and it just didn't cook through well (results were mushy, although very sugary which enticed kids to eat it). BUT if you follow the suggestions by most of the reviewers, this can be amazing. You MUST cut down liquid to 6 eggs and 1.5 C half-and-half/milk. You will very likely need more than one loaf of bread, and slices should be 1.5-2" thick. Cut the bread and let it dry out overnight before soaking it in the egg/milk mixture. Other great suggestions (and I think they are essential to this turning out well) are (1) to cover the dish for the first 30 min (ensures even baking), then uncovered for another 20-30 min; (2) flip the pieces when you go from covered to uncovered; and (3) put on the sauce after you flip the pieces, just before you put back in oven to bake uncovered. Other more minor things that I followed was to replace the corn syrup in the sauce with maple syrup (I did not have corn syrup), add nuts to the sauce (pecans or walnuts are lovely), and I didn't bother with pre-heating the sauce, I just used the heat from the toast to get warm and spreadable. Following the major tips from the reviewers will result in a 6 star dish. My dp does not like sweets, but he LOVED this. Ate almost half the pan himself! And he's already requesting it again! Can't say I don't mind...this was delicious.

Honey Glazed Ham

I'm giving this 5 stars because I modified the recipe based on ingredients that I had on hand, and I thought it was pretty good (so, I would have rated 4 stars, but since I modified, and the original recipe could be better, I'm giving 5 stars). Anyway, solid recipe base. One thing I added was 1 tsp cajun seasoning just to give it a small amount of heat. I omitted the butter because I had none, and the sauce was quite good. Used this on pork chops.

Cheesy Baked Eggs

This was really good! Very creamy and great flavor. I did add in some extra spices, and veggies, but the base recipe is great as a starter. Super easy weeknight meal!

E-Z Drop Biscuits

These really are super easy. I must say that I never add Cream of Tartar - I just never have it. That said, I have made these biscuits multiple times, and they always come out. EVERYONE loves them. Sometimes I will add 1 cup of shredded cheese before adding in milk, just to give them a more savory flavor. Thanks for the great recipe!

Awesome Slow Cooker Pot Roast

Delish! And crazy easy! I have made this twice now, and it is great as written (but I always add mushrooms and carrots- they're a must!). The second time I replaced the water with Trader Joe's 40-clove Garlic Sauce and it really kicked it up a notch. Love to have this with EZ drop biscuits!

Anniversary Chicken I

Wow - I was surprised at how good this was! OK, I did not follow the recipe to a T. First off, I did not brown the chicken first (I'm lazy). Second, I did not layer the ingredients; I just mixed everything together (again, blame the laziness). Third, I did not have any cheddar cheese, but I did have some cottage cheese that I wanted to use up, so subbed that in. But REALLY, it's the mix of ranch and teriyaki that make this dish! I never would have put those 2 together, and it was a delightful surprise.

Slow Cooker Chicken Taco Soup

This is delicious! You don't need the optional topping suggestions (cheese, sour cream, etc) because this soup is amazing as is. The *only* thing I added was 1 tsp sugar, and that was at the end of cooking. I tasted the soup, and it was good, but needed something to brighten up the tomato flavor. Super easy, super good, I will be making this often!

Holiday Chicken Salad

Excellent, with revisions. Made as directed, I agree that there is way too much "crunch" and not enough dressing. The "crunches" all need to be reduced by 1/2. Also, the dressing was a little bland. As a base, this is a solid recipe, but it's made great by adding in more spices (e.g., mustard, curry powder).

Baked Teriyaki Chicken

Really tasty. I used the sauce on pre-made meatballs. And, I did not have white sugar, so I used honey instead. Just FYI, using honey caused the sauce to be thinner. Only other mistake was that I did not double the sauce!

Coconut Macaroons III

Super easy. Word of caution: 5.5 cups of coconut = 2 14 oz bags, NOT 64 ounces (which is what I originally thought since I converted cups to ounces). They were quite good, but super sweet. However, since they are so easy, I will use this as my go-to. Thanks for a great recipe!

Low Carb Jambalaya

This was a HUGE hit! I hate rice (I may be the only person in the world that hates rice, but I can not stand the texture), but I LOVE cajun food. I used to always pick the good stuff out of jambalaya, but this recipe is waaaaay better! Plus, it's really easy! I will be making this a lot! Thank you, thank you, thank you!!

Key Lime Pie VII

SO easy, SO creamy, and SO, SO delicious! This pie was a hit and went fast (although, I must say I ate 2 slices, it was that good). Very refreshing desert for a summer party. I wanted to make this easier on myself (I'm a bit of a lazy cook), so I purchased key lime juice instead of juicing key limes myself. I used 3/4 C+ 1 Tbls of the juice, just to make sure there was enough flavor since I did not have any zest. It came out perfect. I baked mine for 10 min exactly, I did not even bother trying to look for pinhole bubbles. Thanks for a super easy (and fool-proof) recipe!

The Real Mojito

Excellent recipe for a very refreshing mojito. Instead of sugar, I used simple syrup. Initially I made the simple syrup, but it kept recrystallizing, so I finally just purchased some (sooooo easy!). Also, my lime tree is not mature yet, and I had some key lime juice on hand from a pie that I made, so I used that. Delicious! Now I need to buy more club soda because I finished the whole bottle. Love to have these while floating in the pool!
