Brooke's Best Bombshell Brownies

perfectly fudgy, chewy brownie. This is my "go to" brownie from now on. Followed the recipe exact (but left out the chips...didn't have any) and had to split into two pans (no 9x13 in).

Best Cheesy Broccoli Soup

Very flavorful. I used this recipe very loosely, but I think the creator had a lot of good ideas. It's an easily modified soup. I used twice as much broccoli, homemade frozen chicken stock, and leftover frozen mashed potatoes (cleaning out the freezer!). I added a few cloves of garlic and added some thyme and celery salt (since I didn't have celery on hand). I know it doesn't seem like followed the recipe but I did follow her directions for preparing the "broccoli stock", the roux, and when to add the cheese. Oh after I made the "broccoli stock" I blended it all up (helps if my daughter can't see individual veggies to pick out). It was very good and I'd make it again, but next time I'd use less cheese or maybe none and just sprinkle on individual bowls.

Grilled Mustard Potato Salad

Super yummy and easy. Can boil the potatoes earlier in the day and get them soaking in the marinade. Good warm or cold. I used garlic salt b/c I didn't have celery salt. Grilling them brings out a great flavor.

Beef Stroganoff III

Very good. I marinated the beef in a 1/2 cup white wine for a couple of hours before hand. I melted 2 ounces butter and then added the beef and wine. I browned the beef and then plated it; cooked down the wine/butter to about 1/2. While the wine sauce was cooking down, I whisked 4 tbls of flour into the beef broth. I added onions to the cooked down wine sauce until soft then I stirred in the broth/flour mixture and mustard as directed. After the sauce had thickened, I added the beef back to the pan and the mushrooms and let simmer for at least 1 hour, stirring occasionally. I think adding the mushrooms gives extra depth to the sauce. When ready to serve, I added in the sour cream. I added a spoonful at a time until I liked the flavor. Definite keeper.

Lemon Cream Pasta with Chicken

This has now become one of our favorite dishes. We add mushrooms and whatever other vegetables we have on hand to the chicken while its baking...and then mix everything together in with the pasta. It is so good!
