Portuguese Chicken I

Reviewed: Dec. 1, 2008
This was really good -- and I didn't even have cream, which would really have made it outstanding. Just the right amount of chicken, wine, garlic and cream flavors. Terrific over rice. A few notes: I don't think this really takes 45 minutes to simmer, especially if you add warm broth. Also, if you too don't have cream, I used 2% milk with corn starch and it worked fine. My kids both liked this.

Kolachky

Reviewed: Oct. 5, 2008
My Mom is American born but 100% Hungarian and we both make these, although we also make apricot and prune filled 'cakes' as well as the nut. My family calls them 'little cakes' for some reason. To make a truer apricot filling than pie filling, we buy the dried apricots, then boil them until soft, then mash with sugar and a little vanilla. The prunes get the same method but no vanilla. Much better than pie filling. Also, to keep your cakes neat and not split open, make sure you pinch the corners over the filling. I then twist the dough ends after pinching to make them look pretty. We also bake them at 375 for 9-11 minutes vs. 350 degrees. I've been making these for over 30 years, since I was a small child helping my Mom and Grandma in the kitchen, and they're by far my favorite cookie of all time. Enjoy! BTW--they freeze well, just don't dust with confectioner's sugar until you serve them.

Easy Sugar Cookies

Reviewed: Sep. 13, 2008
Awesome!! Kids couldn't get enough! Adults couldn't get enough, either, actually! Dough seemed really gooey before baking but boy, it made some nice chewy cookies. Cooked them 5 minutes, added sugar on top, then another 3. Used margarine like others said. Will not ever use store bought again.

Yellow Squash Casserole

Reviewed: Aug. 16, 2008
Excellent. Made it several times this summer and got rave reviews EVERY time. People who 'don't eat' squash loved it, too. Highly recommended.

Basic Cream Cheese Frosting

Reviewed: Oct. 26, 2007
Excellent. Made exactly as written and it was the perfect consistency for frosting, and tasted rich and creamy. Sweet enough, too, but you could still get the tang of the cream cheese. Put on a triple chocolate cake -- yum. Next time, I'll put raspberry between the layers to complement the cream cheese and chocolate tastes.

Mom's Zucchini Bread

Reviewed: Oct. 7, 2007
Did what others suggested and used w/w pastry flour and 1/2 brown sugar and extra zucchini. Excellent -- moist and very flavorful. My son couldn't get enough (I made bread and muffins as he prefers muffins)! Thanks for the recipe and tips.

Vegetable and Feta Latkes

Reviewed: Sep. 3, 2007
These were excellent and a nice change of side dish vs. rice or same old potatoes. My Dad and I loved them although my kids saw through my ploy to get them to eat zuchinni (as did my husband). Even better the second day when the flavors really set (but not after that; tried for three in a row and by the third day they were getting a little tired).

Fresh Tomato Salsa

Reviewed: Sep. 3, 2007
This was great. I did not add the hot peppers though; my crowd prefers mild salsa. The fresh tomato with fresh cilantro is awesome. I didn't add any garlic; just what the recipe calls for.

Excellent--made it for a party and everyone loved it. I went a little easy on the balsamic but other than that, didn't change a thing.

Chrissy's Sweet 'n' Sour Tomato Salad

Excellent. Used apple cider vinegar like other reviewers, and fresh garden tomatoes and it was so good, I had three helpings. Will definitely make again and again!

Grilled Sea Bass

Reviewed: Jun. 5, 2007
Excellent -- I didn't use as much butter while the fish was on the grill to prevent flare-ups so I drizzled some more on after it was plated and it was still delicious. Great recipe -- thanks!

Excellent -- lemony and sweet but not sickeningly sweet. We used it for cocktails, too, and it was great.

Spicy Grilled Shrimp

Reviewed: Apr. 22, 2007
This is one of my DH and my favorites--gives the shrimp a nice flavor, has a little kick and is perfect for the grill as the shrimp get a tiny bit crunchy on the outside. Perfect in warm weather. Don't serve to spice-phobes...we have one in our family who thinks pepper is too spicy so he won't eat this. His loss--more for us!

Gingerbread Cookies I

Reviewed: Jun. 20, 2006
Delicious, soft, chewy and moist. I also did not have lemon extract; I used imitation almond instead. And, I made them as drop cookies instead of rolling them. Both my kids loved them, as did the neighbors' kids. They asked for more! They also freeze well (mine were only frozen for a couple weeks, as they were in demand again!).

Zucchini Soup I

Reviewed: Aug. 26, 2007
This was good--I served it chilled but I think it would be better warm with a nice crusty bread. Also, I froze a portion of mine for a mere week and when I defrosted it, it was just NOT the same. Anyone freeze it successfully?

Angel Hair Pasta with Shrimp and Basil

Reviewed: Nov. 6, 2007
This was good and tasty. I gave it four stars though because 1) I added a little salt and pepper to taste and 2) I ended up adding back the tomato liquid to the reduction. I thought it was too dry as it was cooking for our tastes (I have two kids (and a husband) who wouldn't just eat the chunky tomatoes -- they need sauce). But fresh parsley and basil and extra garlic, as other reviewers mentioned, made it very flavorful.
