Saltine Toffee

This is very easy and tastes AWESOME. I use 1 cut dark brown sugar and 1 cup butter. I melt the sugar butter mixture stirring once or twice to combine, then DO NOT STIR while cooking. I bring it to a boil and let it cook 3 minutes! Like I said...DO NOT STIR during the 3 minutes. I then spoon the mixture onto each cracker and spread to ensure I don't use too much toffee. Too much toffee can make the finished product thick and chewy. I melt the chocolate chips in the micro and spread it on the crackers. I then use finely chopped pecans on top.

Amazing Crab Shells

Tomorrow I am having a b-day party for hubby. Needed finger food. Found this recipe. Tweaked it a little. Sour cream instead of mayo as a guest won't eat anything with mayo in it. Three large green onions instead of the onion, personal preference. Going to use mini phyllo shells instead of pasta shells. Made the filling this morning and just now sampled it in the phyllo shell. It was like having a little bit of heaven in my mouth!!! I can hardly wait for my guest to try it tomorrow. It's going to be a big hit!!

Baklava

I am having a little trouble with the fact that people want to use a spray bottle for the butter. It doesn't take much more time to use a kitchen brush and get the proper amount of butter on the baklava. The butter, by the way, should be clarified. In your sauce you should have lemon peel and orange peel, not zest, and discard it before pouring on the cooked baklava.

Sloppy Joes II

These are excellent! I made them for a restaurant I worked in and they sold out everytime. I am catering a luncheon tomorrow and the clients requested these! They all love this wonderful comfort food of their youth!

Sweet Potato Pie II

EXCELLENT! Very easy and tasty! For those of you who claimed that the filling was too "mooshy", try baking the potatoes in the oven and not boiling them. Baking them intensifies the flavor of the potatoes.

Baby Back Ribs

I served ribs cooked this way in my restaurant and the public LOVED them. I used Sweet Baby Ray's Honey Bar-B- Que sauce. THEY WERE WONDERFUL! It's worth the effort to individually wrap and marinade each searving....soooo good.
