Chickpea and Quinoa Salad with Lemon and Tahini

I used canned beans and just cooked the quinoa. By doing this, it is really quick to fix. It's best after sitting and absorbing the flavors for a couple of days. I make it on the weekend and take it to work as lunch. It keeps me full until I head home.

Mom's Zucchini Bread

I have never made bread before because I was always a little intimated. But with this recipe, it was not difficult at all and tasted great! Very moist!

Fried Artichoke Hearts

Zucchini Souffle

Very tasty! Like other reviews suggested, I added about 2 cloves of garlic. I added about half a cup of bread crumbs instead of flour. And topped with fried onions.

Honey Grilled Chicken

I have made this twice. Since the reviews indicated it might be bland, I marinated it in minced garlic, lemon juice, and worchestershire for about 12 hours. Then, I added recipe as is. Fantastic! How can butter, honey, and garlic be bad??? So, prepped it for a second grilling this morning (same process) and just craved it all day. It was fantastic again! My husband loved it too. We grill chicken a lot and generally rotate recipes for variey. This will be a regular in the rotation! Love it!

Best Formula Three-Cheese Fondue

Had this for a mid-day Valentine's treat. We loved it. We had to constantly stir it with a whisk and add more wine to liquidify as we savored it....but it was worth it!

Asparagus Chicken Crepes

This was great! My husband said it was better than a favorite crepe dish at a local restaurant (very flattering). Only changes I made were adding carmalized onions and using cream of mushroom soup (no cream of chicken on hand). Fabulous! Will definitely make again!

No-Guilt Zesty Ranch Dip

Blackberry Barbecued Pork Tenderloin

I am a big fan of blackberry so I had to try this. I really liked the flavor but wish it had more flavor in the pork. I marinated it for about 3 hours but plan to marinate longer next time so that the flavor will be bolder next time. Great idea! Will repeat!

Beautiful presentation the way the pancake bakes into a puff! I plan to make this with different ingredients in the future and plan to use more veggies than meat for a little healthier meal.
