Mahi Mahi with Onions and Mushrooms

Sirloin with Mushroom Sauce

Wow, this was awesome! However, I did make some changes. I only had beef tri-tip steaks, and they worked fine. Wanted to have a thicker, richer sauce, so I added some sour cream (about 2-3 tsp) and thickened it with cornstarch mixture. I didn't have a dry red wine, so I used a burgundy cooking wine. It was so good, my son ate his ALL - and he doesn't even like steak!! Or he DIDN'T before I made this! Try the sour cream addition. Along with the red wine/burgundy, it give it a strogonoff sort of flavor. YUM!

Chicken Piccata II

Good recipe! However, I did notice there was no salt & pepper listed in this recipe, so I added some sea salt and ground pepper. Had to double the flour mixture for 4 breasts - maybe they were larger than most? I also took note of other reviewers saying it was 'soggy' so I removed the pan cover for the last 10 minutes and the chicken was very tender and juicy, not soggy. Will make again.

Quick and Easy Alfredo Sauce

Awesome recipe, Dawn! Found this one last minute, trying to find something to use Krab in. Perfect addition! I also sprinkled some oregano and seasoned salt (don't know how much - just til it looked good:) and used a 10 oz pouch of Krab meat, and it was absolutely delicious! Won't use heavy cream again for an alfredo sauce!

Easy Mexican Casserole

This was very easy and delicious to boot! It made way too much, so I would cut the recipe in half and use a smaller pan. Serving size said for 6, but it is more like for 8. And there's just 3 of us!

Guacamole

Awesome! Didn't use the cilantro, as I'm not a fan of that spice. It was very tasty and got rave reviews from my husband! Also made the Easy Mexican Casserole, which was delicious. I'd make both of these again.

Garlic Cheddar Chicken

Awesome! Very moist, full of taste. My son who doesn't like much meat at all LOVED it! Will definitely make again, to the very letter of the recipe. Although, next time I will shred the cheese "fancy" style for better coverage on the chicken breasts.

Best Beef Stroganoff

Flavor was great, had no leftovers! However, the sauce was a little too thin for my liking so I would probably decrease the broth next time. The recipe also didn't make as much as anticipated for the number of servings it was supposed to result in. Maybe my crew are just big eaters?! To feed 4 adults, I would use the full 8 servings recipe.

Watermelon Fruit Bowl

Fun presentation, great combination of fruits, however the lemon zest made it a little too lemony. I would make this next time with just the sugar/water syrup and no lemon zest. Also, make sure the flavors of your fruits are top notch as one bland fruit will taint the whole salad.

Baked Omelet Pie

My family loved this one! I had to leave out the red peppers because my son doesn't like them, so put in more onions and mushrooms to compensate. Also made a cheddar/monteray jack cheese mixture for the top. Primo!
