Easy, Cheesy Tortellini Bake
This was delicious. I used a 19 oz. package of fresh tortellini and melted the cheese in oven instead of broiler. I thought 10 oz. of spinach was great. It's very rich and high in fat, so I won't be making it too often. I made it on New Year's Eve as a special treat for my family. They absolutely loved it.

Baked Dijon Salmon
I used this on some frozen salmon filets. It was great. I think this recipe works well on fish that is not fresh or is not too good to begin with, because the coating has a lot of flavors of it's own to mask any less than perfect cut of fish. Another tip: the dijon I used already had sugar in it so it came out too sweet. Next time I will add less honey or use a different mustard.
