My family loved this! And my husband was very impressed! I stuffed the cavity with a mixture of onion, rosemary, lemon, garlic, and bay leaves. Placed a rub of sea salt, pepper, garlic powder, and thyme on the outside. Baked it for 1 1/2 hours covered and then 1/2 hour uncovered. Had a can of low-sodium chicken broth and 1/2 cup of white wine in the pan to baste it with. That made for a very tasty gravy. Also surrounded the bird with carrots and potatoes while it baked. Wonderful Sunday night dinner! Will definitely make this again!
