Artichoke Chicken

My family really likes this recipe. Only changes that I make is to chunk up the chicken breasts before baking. Sometimes I have to strain off the extra liquid before serving. Excellent over a bed of wild/white rice.

Tuna Noodle Casserole II

This casserole was easy to make and tasted good EXCEPT the recipe calls for too much salt. Next time I will cut the amount in half or delete it all together.

Cousin Cosmo's Greek Chicken

The chicken was great! The sauce was so-so. Couldn't really taste the spinach or tomatoes but it did add nice color. I didn't think that the 1/4 cup of feta cheese was enough so added some softened cream cheese to the mixture. Also, much more flour is needed for the breading. Will probably make this recipe again but with a few variations.

Seared Scallops with Orange-Basil Sauce

Sorry, I was disappointed with this recipe. Saw a suggestion to use fresh O.J. Big mistake. It made the sauce very bitter so the scallops tasted bad. I added some shrimp in with the scallops and they tasted better. Guess the scallops absorb more flavors (good and bad) from the sauce.

Ultimate Double Chocolate Cookies

Yummy! Like a piece of fudge in a cookie. Only thing different is the recipe yielded 72 cookies and not 42 as listed.

Angel Whispers

I loved these! Whispers is a great name as they are so light and just melt in your mouth. Only change I made is I heated the filling in the microwave stirring after every 30 seconds. Turned out yummy!

Chicken Florentine Casserole

This was very good. I was skeptical about the list of ingredients. I don't care for mushrooms so subbed cream of chicken soup and omitted the fresh mushrooms. Also, I cut the chicken into bite-sized pieces and cooked on the stovetop with some salt, pepper, and garlic powder before adding to the casserole dish. Even my pickiest eater said it was OK. Served it over roasted garlic linguini. My family said this one is a "keeper".

This was just OK. I added more bacon than the recipe called for and then didn't find the flavor of it in the dish. Just tasted like pasta with a bit spicy tomato sauce. On the other hand, my husband loved it!

Cat Poop Cookies III

These looked so gross but were so fun to make! The flavor was a bit "blah", and might be improved by adding more sugar or maybe some chocolate chips. I added chocolate & butterscotch chips, peanuts, and coconut. My oldest DS has request 3 batches of these for his Halloween party next Monday night.

Roast Chicken with Rosemary

My family loved this! And my husband was very impressed! I stuffed the cavity with a mixture of onion, rosemary, lemon, garlic, and bay leaves. Placed a rub of sea salt, pepper, garlic powder, and thyme on the outside. Baked it for 1 1/2 hours covered and then 1/2 hour uncovered. Had a can of low-sodium chicken broth and 1/2 cup of white wine in the pan to baste it with. That made for a very tasty gravy. Also surrounded the bird with carrots and potatoes while it baked. Wonderful Sunday night dinner! Will definitely make this again!

Marie's Easy Slow Cooker Pot Roast

Very good. I did it in the oven at 325 degrees for 3 hours. Added some garlic in with the veggies. The aroma was wonderful and the gravy (after I thickened it with cornstarch) was very flavorful.
