Mom's Zucchini Bread

Reviewed: Jun. 28, 2012
My neighbor gave me some zucchini. I went in search for recipes and came across this one. Due to personal preference, I used unbleached white flour and raw sugar and elminated the walnuts. I was almost out of cinnamon, so I used nutmeg. I made into jumbo muffins and topped with a glaze made of evaporated milk, butter and raw sugar. These are so good and moist!! I will definitely be making again. Thanks for sharing!!

Paul's Pumpkin Bars

Reviewed: Nov. 15, 2011
I made these for our homeschool party, and they were a huge hit!! I did make a few changes..For the bars: I used sugar in the raw, canola oil, unbleached flour, reduced eggs to 3, added pure vanilla, pumpkin pie spice and nutmeg. For the icing: I followed other reviews by using 8 oz pkg cream cheese and doubling the rest of the ingredients. I wil certainly be making again! Thanks for sharing!

These are fantastic!! The only changes I made were to use: unbleached flour and sugar in the raw. I didn't have quite enough pb cups, so for those few, I topped with chocolate chips & chopped up heath bar. Recipe is certainly a keeper! Thanks for sharing!

These are sooo good! I made a batch for my husband to take to work as snacks. He has a few missing..I couldn't stop eating them:) I used sugar in th raw & butter. I also added a dash of cinnamon and pure vanilla extract. For the sugar coating: sugar in the raw & butter. I doubled the batch, but wish I had tripled it! I will definitely be making these again! Thanks for sharing!!

Sassy Chicken Enchilada Dip

Reviewed: Jun. 4, 2011
I took this dip to a party...it stole the show!! I was short on time, so I used canned chicken breast. I mixed the chicken, cream cheese, rotel & seasonings in my kitchenaid. I tweaked the spices until I achieved the desired taste. I also added garlic granules & onion powder; if I hadn't been serving to guests, I would've added cayenne pepper. I placed the chicken mixture in a serving dish, topped with shredded cheddar cheese, fresh cilantro, fresh diced tomatoes, chopped green onions & black olives. Certainly a crowd pleaser! Will make again. Thanks for sharing!

Sweet Spicy Wings

Reviewed: May 13, 2011
Due to non-stop rain, I cooked the wings in the oven. I seasoned wings with garlic granules, sea salt & coarse ground black pepper; baked in oven till done. I combined sauce and wings in ziplock bag, mixed well and let sit for a bit. On a foil wrapped pan, I placed coated wings back in oven till sauce was bubbly. I fixed 3 different kinds of wings and this sauce was my favorite! Will certainly make again. Thanks for sharing!

On a foil covered pan, I placed wings back in oven till sauce was bubbly. Very good! Will certainly make again.

Strawberry Cake from Scratch

Reviewed: May 2, 2011
Made this cake for my husband's birthday. The cake tasted wonderful, but it didn't rise as I thought it should've. In reading the reviews(which I should've done first), perhaps beating the egg whites seperately would've been key. I topped cake with icing made of cream cheese, coolwhip, powdered sugar, vanilla & left over strawberry puree. Garnished with chocolate covered strawberries. Cake was good enough to give another shot. Thanks for sharing!

Ninety Minute Cinnamon Rolls

Reviewed: Apr. 24, 2011
Made these for Easter breakfast. They are soooo good!! In an effort to be a bit healthier, I used 90% fresh ground white wheat flour, and replaced white sugar with sugar in the raw. I used butter rather than margarine & eliminated the raisins. I used my dough hook to mix dough. The dough was easy to work with, and rolls turned out beautifully! Will certainly make again! Thanks for sharing!!

Extreme Chocolate Cake

Reviewed: Jan. 26, 2011
My 8 year old daughter wanted to make a cake for her daddy. She picked out this recipe...it turned out wonderful! She used sugar in the raw, rather than white sugar, special dark baking cocoa & canola oil. Also added just a bit of instant coffee. She baked the cake in a bundt pan. The cake turned out beautifully!! Her daddy loves a custard like sauce on top of chocolate cake, so she made that, rather than the icing listed. We will certainly make this cake again! Thanks for sharing!

Savory Wheat Crescents

Reviewed: Jan. 24, 2011
Went in search for a crescent roll recipe, and found this one...so glad I did! I decided to make a meal out of them by making chicken packets. I made the dough as directed, adding just a bit of basil to the mix(I did soak the freshly ground wheat flour in the milk for 20 min). After cutting the dough, I spread each wedge with a buttery, parmesan, herb cream cheese mixture & topped with saute'd chicken breasts and onions. I rolled them up, and baked as directed. As soon as they came out of the oven, I brushed tops of rolls with garlic butter. When serving, I topped each crescent with a garlic herb cream of chicken sauce. My family loved this! They said the best part was the rolls:) I plan to make again just as rolls. Very easy recipe to make, and the rolls turn out beautiful! Thanks for sharing!!
