Baked Scallops

I thought the bread mixture was too much for the quantity of scallops, so only use enough to cover them. Otherwise, these were amazing!

Beef Barley Vegetable Soup

I made up my own directions so I could use my crock pot for the entire dish. I did step two first, then cubed my beef and threw all of the ingredients in the crock pot minus the barley. I three that in about 45 minutes prior to eating, and it was amazing!

This was good. I thought I had softened my cabbage enough, but it was still a little too al dente for me. I realized after that my fiance did not cut the stems out as he was chopping. Great accompaniment to the Guiness Corned Beef.

Braised Balsamic Chicken

I threw all of this in a crock pot and let it sit on low for four hours - it was amazing. I served it over long grain brown rice - perfect healthy dinner!

Chocolate Mint Dessert Brownies

These turned out great. My mint cream was a little thick so I added a touch more creme de menthe. Also, there are two types of creme de menthe - one is clear. I used this one so I also needed green food coloring to color my mint cream.

I did not care for these at all. As other people have commented, the brownie was very dry and crumbly, so maybe a box mix would be best.

Beef Bourguignonne

The beef did cook up tender, however, I thought this was lacking in flavor. I served it over couscous just because we are cutting back on carbs, and it worked. It needed something that I cannot put my finger on.

Biscuit-Topped Italian Casserole

Like other reviewers, I sauteed an onion and some garlic in with my ground beef for extra flavor. I also used a 6oz can of tomato paste (the one with herbs in it) instead of the tomato sauce and it was extremely flavorful and not the least bit watery. I also chose to use a canned veggie mix instead of frozen ones. I halved the biscuits horizontally and covered the whole dish, sprinkling the extra cheese on top five minutes before it was to come out of the oven. Yum!

Bread Pudding II

I used challah bread and used a dried cranberry/raisen/goldens mix but otherwise followed the directions to a t. It was perfect - not eggy or runny as some other reviewers have stated. I made a whiskey sauce to go with it and it was awesome.

Tater Tot Casserole I

I have used some different flavored sausages (chicken and garlic or chicken and sundried tomato) and the extra flavor gives the dish an extra boost. I have also cooked up onions or put green onions in with the sausage.

Creme Brulee French Toast

I used Challah bread cut about an inch thick and it worked well (although if you like it eggier, I would use 6 eggs instead of 5). I also used 1/2 cup of pecans on the bottom with the caramel sauce and it was yummy.

Baked Pork Chops I

Deliscious. I was worried that after pan frying, baking for 90 minutes would dry it out, but I let it bake the entire time and it was tender and juicy (you could cut it with a fork). I added some fresh mushrooms and dijon mustard to the sauce for some tang. It was great.
