Apple Enchilada Dessert

So easy! I made this alongside a Mexican meal. Like another reviewer, I kept it in the fridge until we were eating and then let it bake - the only thing was that the sauce separated in the fridge, and kept separating everytime it was stored in the fridge. It's ok if you stir it and reheat it, though. My family loved this, it may even replace the traditional apple pie at some meals because it's so quick!

Mexican Rice III

Even though I had some huge problems (not related to the recipe), it still turned out wonderful. About the time it was cooking for the last 20 minutes, our power went out for the night. Everything soaked in that chicken broth for hours and hours. I tried to salvage it the next night (we put it in the fridge, later) by adding about a cup of water and letting it cook for about 15-20 minutes longer. The water wouldn't boil out, so it was very moist. Maybe it's just the Southern girl in me, but I liked it better that way! Great recipe.

Texas Chicken Quesadillas

This was praised as being better than ANY restuarant quesdilla! I used four total cups of cheese, though. That's WAY more than the recipe calls for, but I had no problems with oozing and it would have been dry without the extra cheese. My family looooved this.

Fresh Salsa I

I made this to go along with the Texas Chicken Quesdillas, but due to a power outage, quite a bit of it went to tortilla chips. It was very garlic-y to me, but my family loved it. Next time I won't use all four jalepenos; it was VERY hot, even after adding a can of plain diced tomatoes. It was still so good that my family toughed it out even through the fire! I also substituted garlic powder for cloves, and at the advice of other reviews, added fresh cilantro and lime juice.

Award Winning Soft Chocolate Chip Cookies

I went by the full recipe rather than cutting it down, and they turned out great. They did remain soft for a long time, but my only complaint is that the chocolate chips and the softness are about the only redeeming qualities of these cookies. The actual cookie part is rather bland and unsatisfying. My boyfriend loved them just because he loves soft cookies, but I would either add less flour (There is a possibility that I threw in an extra cup...) or more chocolate chips for next time. I also took them, still warm, to a high school swim team banquet, and they were a BIG hit with the homemade ice cream! They are definitely best when still warm.

Oreo™ Cookie Cake II

At the advice of some other reviewers, I used chocolate butter recipe cake mix (Betty Crocker) and "slipped" and put in an extra hand-full of chocolate chips. I used a majority of the cookie crumb mixture in the middle of the cake and the rest functioned as more of a garnishment on the top. I also made a splash of extra glaze. The cake came out awesome, but not to excessive fanfare, due to it being rather rich after a big meal. It tastes JUST LIKE the Krispy Kreme devil's food doughnuts, and therefore I would suggest this to go well with coffee. When I make it again, I will definitely make more glaze, though. (Hint: Poke holes with the handle of a fork in the cake before pouring the glaze... awesome!) Great, easy recipe.
