Insanely Amazing Jalapeno Cheese Dip

I made the version described by PrincessDaBurgh where you substitute cream cheese and sour cream for mayo. Also, add the breadcrumb topping. My guests loved it!!

Penne From Heaven

Used all ingredients made the following changes: 1) sauteed two cloves of garlic and two shallots then added mushrooms. 2) Used diced tomatoes with garlic, basil and oregano seasoning. 3) Topped with grated parmesan, sliced grilled chicken and toasted pine nuts. My husband loved it!

Fabulous Fajitas

To kick it up a notch......use a very hot cast iron skillet to "grill" red onions, red, orange and green peppers. Add dash of garlic salt, chipolte chili powder, cilantro and cumin while they cook. Substitute mushrooms with halved cherry tomatoes and sliced jalapenos. Grill marinated chicken cut into slices. Serve with salsa, cheese and sour cream.

Sun-Dried Tomato Basil Orzo

Beef Tenderloin With Roasted Shallots

Made this last night and used a 5 lb. tenderloin. Doubled the gravy and had plenty left over. Followed the reciped exactly and it was delicious! Will definitely make again.

Slow-Cooker Chicken Tortilla Soup

This is a family favorite!!! Here are some changes that I make: For large crock pot, substitute 28 oz. can of crushed tomatoes and 14 oz. can of diced tomatoes w/zesty chiles, rather than 2 cups water. Add a can of "Black beans with cumin and chili spices"; Double chili powder and add chipolte chili powder. Cook for 6 hours on low then shred chicken. Cook 2 hours additionally. Top with cheese, sour cream, jalapenos and crushed tortilla chips. Excellent!!!

Steak Salad

We just finished eating a simplified version of this recipe and it was absolutely delish!!! Marinated the steak for 10 hours in a teriyaki sauce then cooked on grill for about 5 minutes on each side. Used a good, bottled balsamic vinaigrette dressing and it was ready in no time. The bleu cheese, red onion, marinated steak, and balsamic dressing are such good matches. Also used McCormick crunchy "salad toppins" to add some texture. We had toasted (on the grill) whole wheat pitas on the side. Can't wait to have this again.

Sausage Spinach Alfredo Lasagna

My family really likes this. Try sauteeeing onions, garlic and fresh mushrooms and adding to sausage, spinach and alfredo sauce misture. I usually double the alfredo sause. Make it a day ahead. Add extra milk/cream, if necessary. Watch the oven so it doesn't dry out.

Chicken Pesto a la Lisa

Feta cheese and sun-dried tomotoes really make this dish great. I also added broccoli, sliced grape tomotoes and used whole wheat penne pasta. Took the advise of another and substituted 1/4 cup white wine for some of the chicken broth. Can't wait to make again.

Grilled Bruschetta Chicken

No question a fan favorite at my house. Marinated the chicken in Italian salad dressing for several hours then cooked on grill. Used storebought bruschetta (Wegmans makes it great), mixed with some grated parmesan cheese and topped with fresh mozzarella. Popped in oven on 425 for about 10-15 minutes to brown cheese and heat tomatoes. Can't wait to make again.

Maple Sausage Breakfast Burritos

Excellent recipe. Used Bob Evans spicy sausage, sauteed with garlic, onion, red and green peppers. After rolling up the filled tortillas, I topped each with 2 Tbsp. salsa and more shredded cheese and put in jelly roll pan in oven for 15 minutes. Served with more salsa. Everyone loved them!

Broccoli with Garlic Butter and Cashews

Fabulous taste. I prefer to steam veggies rather than boil. Used only 3 Tbsp. butter and white wine vinegar. Thickened it with ~1 Tbsp. additional vinegar mixed with 1/2 Tbsp. corn starch. Had some additional fresh green beans on hand so added it to the broccoli. My son liked the green beans and husband liked the broccoli. I liked both. We will definitely have this again!!

Salsa Chicken Burrito Filling
