BBQ Pork for Sandwiches

This isn't quite what you get by smoking the meat for 6 hours in a smoker, but it's close. I added a couple of shots of liquid smoke. Very good and very easy.

I loved it. My wife thought is was a bit spicy and could overwhelm the meal so some may want to cut out the red peppers.

It's Chili by George!!

I know good chili and this is outstanding chili! I added 3 cans of diced tomatoes in place of the tomato juice; added a couple cloves of garlic and a small can of green chilies. For those who want more heat, just add a few red pepper flakes to the individual bowls. So much better than the chili seasoning packets at the store.

Eggplant Parmesan II

I don't like eggplant but my wife tells me this recipe is awesome and good for you. I sliced the eggplant 1/8 to 1/4 inchs thick, salted and let it sweat for 10 minutes between paper towels, then 10 minutes on each side in the oven.

I don't like fish but I love this recipe. I double the marinade and let talapia rest in it for 2 hours. This recipe will make anyone look really good.

I used to make this basic recipe when I was in college and I've been looking for it ever since. I cut back the olive oil to 1/4 or 1/3 cup, otherwise this recipe is just awesome. Use fresh lemons and let this salad set for 24 hours. Be sure to mix before serving.

Angel Chicken Pasta

I'm not a big fan of mushrooms but it seems everyone else is, so the 5 rating. Know that golden mushroom soup is completly different from cream of mushroom soup. In addition to doubling the soup, I cut the chicken into cubes, coated them in flower and cooked them in olive oil, rather than baking it.

Marie's Easy Slow Cooker Pot Roast

I also doubled the potatoes, onions and celery. I used a bit of Kitchen Bouqet to brown the meat and I added a touch of liquid smoke to the crock pot. This is a complete meal!
