Chocolate Zucchini Cake II

I baked it in two loaf pans, easier to manage with just two people in the house. I also topped the batter with a handful of mini chocolate chips.

Overnight Blueberry French Toast

I loved it because I did what many of the reviewers suggested--used only 9 eggs (10 would have been fine), French bread cut into cubes and 'toasted; in the oven because I am always doing things like this at the last minute, 10-12 ounces of cream cheese mixed with 1/3 cup powdered sugar and 1/4 cup milk, added cinnamon and nutmeg to the milk/egg mixture, lemon juice to the syrup and used a 16 ounce bag of frozen blueberries. I put half the berries in the casserole, half in the syrup. It is now my winter dessert recipe.

Simple Mexican Coleslaw

I was recently diagnosed with breast cancer. Searching for foods that would be diet helpful, several sites (academic sites as well as homeopathic)mentioned that raw or lightly cooked cabbage is a good choice. It also mentioned olive oil so I looked for those ingredients. I happened to have rice vinegar with basil and oregano seasoning so I used it. While it is not my preferred cole slaw recipe, I think it fit my needs and I will be having it a lot.

Cook-Ahead Pork Chops

This was great--I added sea salt and coarse pepper to flavor. I made 8 in the 9 x 13 pan, we ate 3 and I froze the remaining 5 in meal size portions with broth.
