Quinoa and Black Beans

The Best Banana Bread

I've tried many banana bread recipes, both new and classic, but this one was perfect. Simple and flavorful. I've made it twice this week alone! We don't do margerine, so I subbed butter. I also like adding ground flax to my baking, and 1/2 cup added to this recipe was perfect. I also put my bananas in the food processor and really puree them until they're thin and light. Makes for even fluffier bread and muffins. For muffins, I baked 30 minutes instead of the hour for the bread.

Slow Cooker Spicy Black-Eyed Peas

This recipe was truly fantastic. I made a couple of changes, simply because of what I had on-hand. I used turkey ham intead of pork, and vegetable bullion cubes instead of chicken. These beans were fantastic while hot and fresh, but I left them in the crockpot, turned off, overnight, and they were even better this morning! The sauce thickened up, so they're the texture of baked beans, with chunks of meat and fantastic flavor. Definitely making this super-simple recipe again!

Bread Machine Bagels

AMAZING! I've tried bagel recipes before, and they just didn't turn out well. I followed this recipe to a T, aside from omitting the egg wash and poppy seeds. They were a little crisp on the outside, and fluffy on the inside. DE-LISH! I put them in an air-tight container, and they were great the next day for breakfast as well.

Pumpkin Fudge

AMAZING! I followed the advice of a few reviews the first time I made it, and reduced the amount of sugar- BAD CHOICE! It was sticky goop that never set up. Delicious goop, but not fudge. It sounded so amazing that I couldn't give up. I tried again a couple days later, and followed the recipe to a T. PERFECTION! It's so sweet, so rich, and so pumpkiny! My sister is the eternal fudge critic, and even SHE raved about it. This is definitely becoming a permanent fixture in our holiday season!

Sweet Potato Gnocchi

I subbed butternut squash for the sweet potatoes, and just put some butter and romano cheese on it when it was still hot. Delicious, melt-in-your-mouth goodness.

DIVINE! I followed the recipe to a T, and it was awesome. I made it as a birthday cake, in 9-inch rounds, and frosted it with the recipe here called Cream Cheese Frosting II- Perfection!

Vanilla Pudding

Easy recipe, very good pudding. A good recipe to keep in your back pocket since most have all these ingredients at any given time. I read the bad reviews and saw many were complaining that it'd burnt, disliked its foamy texture, etc, which all scream 'user error,' not the recipe. A few mentioned it not setting up, but I followed this recipe exactly using 2% milk, refrigerated it for 2 hours in serving-size small bowls, and it set up perfectly smooth, creamy, and exactly as pudding should. My kids loved it.

Bran Flakes Muffins with Raisins

I've made these several times, and each time they've been excellent! The whole family loves these, and they're healthy to boot. I like to use butter for the shortening, and add 1/2 tsp of cinnamon for a little extra flavor.

Annemarie's Lemon Bars

Absolutely amazing. I doubled the recipe (in a 9x13 pan) and tripled the lemon curd. I used fresh-squeezed lemon juice, and zested three of the lemons into the crust. It was perfect. They were the rave of the family picnic we took them to. Every single person asked for the recipe!

Kielbasa with Pasta

DELICIOUS! I used whole wheat thin spaghetti instead of angel hair, and cut the kielbasa slices into quarters to make it kid-friendly. Really delicious.

Swedish Spritz

FANTASTIC! I made this with my three toddlers and not only was it easy and fun for all of us, the resulting cookies were buttery and delicious. SO easy. The one and only modification I made was to do a full teaspoon of almond extract and no vanilla. It was PERFECT!

Nutty Quick Bread

Excellent! Great flavor, easy to make, and pretty healthy! My kids love it- said it tastes like yummy oatmeal in a bread form. LOL! I added a teaspoon of cinnamon for a little something extra. It was PERFECT. This will be a weekly addition to our breakfast line-up.

Caroline's Chocolate Fudge Frosting

EXCELLENT! I omitted the vanilla extract and replaced the milk with coffee. SO RICH! I wanted a bit thicker texture but not slap-you-in-the-face sweetness, so instead of adding more sugar to thicken it I added 1 tablespoon of corn starch. Perfect!

Jam Filled Butter Cookies

Really delicious. I read through the reviews and decided to make some changes, and I'm SO glad I did. They were delicate, delicious, and light. I added 1/2 tsp Almond extract, rolled each cookie ball in sugar before making the divot for the jam. SO yummy.

Very good basic minestrone. I tweaked it a little on recommendation from a friend that the water made it a tad bland. Subbed 6 cups of tomato juice for the 2 cups water and 4 cups tomato sauce. Perfect. Served with a loaf of hot and fresh home Italian bread for a big family lunch get-together. EVeryone loved it. :-)

Mom's Zucchini Bread

Really delicious. A great recipe for even beginner bakers. I made some changes to healthy it up a bit this time. I subbed pureed bananas for the oil, halved the sugar (due to the natural sugars in the bananas), and used half whole wheat flour. Delicious and nutritious! My two toddlers and my picky husband loved it!
