Red Velvet Cake

I made this cake for the first time a couple weeks ago. It was just ok. I followed the suggestion of several reviews and used the Cream Cheese Frosting II recipe instead of the one here, because so many people disliked the recommended frosting. Overall, the first try was ok. I cooked the cake for the full 30 minutes. Not a good idea. It came out dry, crumbling and bland. The cream cheese frosting is what gave the cake some flavor. I'm giving this recipe five stars because the second time I made it, it was AMAZING! I followed the recipe to a T, but used Hershey's Special Dark cocoa powder, and baked the cake for 20 minutes. Perfect! I also used the original frosting recipe. I followed the directions exactly, and was VERY dissapointed that it came out looking like curdled milk, even though it tasted good. I decided to stick to it and whipped the frosting with my beaters on high speed while I turned the bowl by hand. It took a good fifteen minutes of mixing, but when I was done, it was the lightest, fluffiest, smoothest, richest frosting I've ever made. Such a unique, but delightful cake! I do wish that the author would have added important details like the mixing necessary for the frosting, considering he/she was SO strict about every OTHER little detail. ;-)

Italian Wheat Rolls

This is a fabulous recipe. I halved the recipe, then made 6 large sandwich-size rolls instead of 12 dinner rolls. They were a touch dense, but nothing a little extra rising time for larger rolls wouldn't cure. My mistake. Anyway, the rolls were SO tasty all on their own, but with some pulled chicken and barbeque sauce, they were DIVINE! This is going in my recipe box.

Pumpkin Fudge

AMAZING! I followed the advice of a few reviews the first time I made it, and reduced the amount of sugar- BAD CHOICE! It was sticky goop that never set up. Delicious goop, but not fudge. It sounded so amazing that I couldn't give up. I tried again a couple days later, and followed the recipe to a T. PERFECTION! It's so sweet, so rich, and so pumpkiny! My sister is the eternal fudge critic, and even SHE raved about it. This is definitely becoming a permanent fixture in our holiday season!

Jamie's Minestrone

Very good basic minestrone. I tweaked it a little on recommendation from a friend that the water made it a tad bland. Subbed 6 cups of tomato juice for the 2 cups water and 4 cups tomato sauce. Perfect. Served with a loaf of hot and fresh home Italian bread for a big family lunch get-together. EVeryone loved it. :-)

Black Bean and Salsa Soup

INCREDIBLE! Simple, healthy, and SO delicious. A fantastic lunch with a side of tortillas or cheese quesadillas. Even my kiddos who don't like black beans themselves love using this as a dip!

Kielbasa with Pasta

DELICIOUS! I used whole wheat thin spaghetti instead of angel hair, and cut the kielbasa slices into quarters to make it kid-friendly. Really delicious.

Apple Crisp II

I followed the instructions of many-many reviews by doubling the crumble and putting half on the bottom, as well as halving the mount of liquid added. It was SO tasty, but a tad dry with all that crust. Next time(and there WILL be a next time) I'll again do the double crumble, but do the full amount of water called for. :-)

Pumpkin Bread

DIVINE! I followed the recipe to a T, and it was awesome. I made it as a birthday cake, in 9-inch rounds, and frosted it with the recipe here called Cream Cheese Frosting II- Perfection!

Devil's Food Cake I

I wanted a good, rich, moist, decadent chocolate cake, and with my modifications- AMAZING. I I subbed strong coffee for the water, and buttermilk instead of the milk and vinegar. Perfection!

Caroline's Chocolate Fudge Frosting

EXCELLENT! I omitted the vanilla extract and replaced the milk with coffee. SO RICH! I wanted a bit thicker texture but not slap-you-in-the-face sweetness, so instead of adding more sugar to thicken it I added 1 tablespoon of corn starch. Perfect!

Mom's Zucchini Bread

Really delicious. A great recipe for even beginner bakers. I made some changes to healthy it up a bit this time. I subbed pureed bananas for the oil, halved the sugar (due to the natural sugars in the bananas), and used half whole wheat flour. Delicious and nutritious! My two toddlers and my picky husband loved it!

Bran Flakes Muffins with Raisins

I've made these several times, and each time they've been excellent! The whole family loves these, and they're healthy to boot. I like to use butter for the shortening, and add 1/2 tsp of cinnamon for a little extra flavor.

All American Apple Pie

Was this recipe easy? YES! I followed it to a T. Was it tasty? Mostly. Was it what I expected? Not a bit. The filling was dry after baking- just cooked apples and spices, inside an odd, goopy, slightly salty crust that never crisped-up like a pie crust. Not bad, really, just not great.

Pizza Dough III

This dough is truly the best I've ever had- AMAZING! It makes a large pizza with generous crust, which I've used for making a 'stuffed crust' twice. I just found this recipe two weeks ago and I've made it four times already. My husband asks for pizza now every time I ask what he wants for dinner. I just bought some whole wheat dough today and will be trying it 100% whole wheat next time. We're both anxious to see how this healthier twist on an already fabulous recipe turns out.

Bagels I

Very good- excellent taste. For some reason my dough wouldn't rise, so after two hours I just made the bagels anyway. Very dense, but tastey! The malfunction was likely my fault.

To Die For Blueberry Muffins

This recipe was PHENOMENAL! I only had raspberries on hand so I substituted them, and they were fabulous. Even my husband who is an uber-picky eater loved them. I did find, however, that the recipe for the crumb topping made WAY more than I needed, even with generous topping. No problem- I put it the leftover topping mixture in a Ziplock bag in the freezer. I'll definitely be making this recipe again soon!

Vanilla Pudding

Easy recipe, very good pudding. A good recipe to keep in your back pocket since most have all these ingredients at any given time. I read the bad reviews and saw many were complaining that it'd burnt, disliked its foamy texture, etc, which all scream 'user error,' not the recipe. A few mentioned it not setting up, but I followed this recipe exactly using 2% milk, refrigerated it for 2 hours in serving-size small bowls, and it set up perfectly smooth, creamy, and exactly as pudding should. My kids loved it.

Peanut Butter Chip Cookies III

DELICIOUS! Slightly crunchy texture on the outside, soft and chewy inside. I read through the reviews and followed other recommendations to up the amount of peanut butter to 1 cup. Excellent! I also used "extra crunchy" peanut butter and skipped the walnuts altogether. If Reese's Peanut Butter Cups were ever turned into a cookie, these would be it. SO GOOD!
