Oatmeal Raisin Cookies I

This is the best oatmeal cookie recipe I have made. I added a touch more cinnamon. I used golden raisins and I soaked them for a bit before adding them to the batter. The cookies were soft and chewy. A "healthy" treat.

Restaurant-Style Coleslaw I

I dont use a pre-cut mix. Cut up a medium head of cabbage and grate a few carrots..cheaper. This recipe is not too sweet or too vinegary. Great for a summer BBQ.

I saute the onions with the beef to soften them up a little more. I add a can of corn to the mixture. I love cheese so 1 cup is just not enough for me.

Mexican Chicken

Nice and easy weekday recipe for a busy family. The only thing I changed is the type of peppers we use. I don't like green peppers so we use red, yellow or orange peppers. If you don't like a lot of spice then use a sweet chili sauce or none at all.

Bacon Roasted Chicken

Who doesn't like Bacon? I was able to make a great gravy from the drippings. Only reason I didn't rate it 5 stars was the cooking time. For my bird it took a lot longer then what is listed and I did everything the recipe stated to do.

Foolproof Rib Roast

I was hesitant on just leaving the roast in the oven for so long without the oven turned on. The BEST roast I have ever had. Well worth not being able to use the oven for a few hours.

Smothered Beef Short Ribs

I had never cooked short ribs, this was easy and was delicious. Will add more veggies next time and maybe add parsnips too. Served over rice.

Very easy and tastes great. I was skeptical about the topping of mustard, ketchup and brown sugar...It was great!! I did saute the onions with a little butter and garlic.
