I have made these many times, and the BEST way to do it is to use a silicone mat! The will never burn on the bottom and you won't have to chance ruining them when you try to get them off the pan! They come right off with no effort!

Chocolate Eclair Squares

I was a little disappointed with these with as much as every one raved about them. Unfortunately (I thought), it just tasted like pudding with some chocolate drizzled over top. I was expecting to be wowed.

Spicy Garlic Lime Chicken

This dish is easy and delicious, the only thing I do differently is to cut the chicken into bite size pieces--it adds more surface area to hold the delicious spices and makes for faster cooking.

Black Bean and Salsa Soup

This is amazing for the amount of time and small number of ingredients put into it! I used beans I had pressure cooked instead of canned--helps cut out the sodium--and this soup is the best black bean soup I've ever had!

El Dorado Beef Casserole

meh--not that great. For it to be a good recipe you'd basically have to alter the whole thing. First, sub something else for the tomato sauce-then add some more spices to the meat, and that's just a start!

Honey Curried Roasted Chicken and Vegetables

Wonderful recipe! This is great for people who like that curry flavor but not the spice! Like many have said there is no way you can roast your chicken at 350--I used the roasting recipe for the Rapid Roast chicken recipe found on this site where you do 20 min at 450 and then forty at 400. That will get the job done quickly and at the right temps. Despite the incorrect cooking info, when you actually get it cooked, it is amazing!

Aunt Anne's Coffee Cake
