Pan-Fried Steak with Marsala Sauce

Reviewed: Nov. 10, 2006
This was very good, I think next time I will try the rosemary, I did not have any this time so I used a little thyme, and I think I cooked a little too long because the sauce evaporated a lttle too much and I did use mushrooms. My husband and kids liked it and thats all that counts. I also grilled the steaks but next time will try pan frying it. I had some really good steaks so I was scared to pan fry them.

Mexican Rice III

Reviewed: Nov. 10, 2006
HOLY COW!!!! I LOVED it. I used a little red and a little yellow peppers.and just a dab of hot sauce because I had no jalapeno pepper. I dont know exactly how much cilantro I used, maybe a small had full I dont think it was as much as it called for but close. I put the rice inside of a burrito and my kids almost had to roll me away from the table!!!! I couldnt stop eating it!!! THANK YOU, THANK YOU, THANK YOU!!!! By the way if you love cilantro have no worries about making this dish

Beef and Bean Chimichangas

Reviewed: Nov. 10, 2006
This was so AWESOME, but what made it so great was not in the recipe. I made Mexican Rice III from this site and put a scoop full into each Chimi/burrito for the chimi itself, I only put a handful of corn in ( next time I will leave corn out) I only had 1 cup of taco sauce so I used one cup of salsa too, and no G.pepper so I used red. If your having a hard time with the shell, just sprinkle a little water on your hands when you wrap it up and it will help. I loved the baked shell mine were not really brown but great light crisp. I know that a chimi does not have rice in it, a burrito does, but a chimi doesnt have any kind of red sauces in them either, atleast none that I have ever had. And the rice that I made I had to use different color peppers also, but doesnt matter. I'm telling you if like Cilantro try this with the rice, its awesome. I think next time I will try the meat with no sauce maybe some spices then beans and rice, and dont forget the homemade guac. on top!!!!

Beef Nacho Casserole

Reviewed: Nov. 4, 2006
My kids and hubby liked it. I definetly used the sour cream and not Miracle whip, and some taco seasoning. I thought it was good too, as I sat there and keep dippng chips into it, but I dont like it for a sit down meal for myself, but when I'm throwing something together for the gang really quick I will definetly use this recipe on my list for quick and easy.

Easy Seven Layer Vegetable Salad

Reviewed: Nov. 4, 2006
I do change my veggies from this recipe, but you could put whatever on it. But its the perfect combo of 2 cups of mayo and 3 TBLS. of sugar that makes it. I use 1 cucumber, 1 bunch of green onions,6 eggs cut up and only one cup of peas,I layer that stuff with the lettuce and then put on the dressing, sharp chedder all over the top and some tomatoes and bacon, (I only use about 6 slices)to top it off. Everybody wants this recipe and it is better the next day!!!!

Broiled Tilapia Parmesan

Reviewed: Nov. 4, 2006
My hubby and I thought it was GREAT, but for the kids ages 7,5,& 2 I had to take off some of the topping and then they loved it, so then it wasnt so strong for them, my sauce was a bit lemony and alot of Parm. cheese for them, but like I said Mom and Dad LOVED it. I use to always make fish the same old boring way with some onion slices and lemon slices and black pepper and broil it, boy! not anymore. THANK YOU

Cauliflower and Broccoli Bake

Reviewed: Nov. 4, 2006
this was pretty good. the sauce will be good and thick if you follow the cooking instructions closely and I did cut the milk, but I still used 2 cups. You dont want it to boil, but you do want it to be bubbling quit a bit while you whisk it. I see why see calls for less veggies, I think the flavor would of the sauce would be more, I used a small bag of each and I probably could of used 1/2 of each like she called for, but it was still good. the reason I only gave a three was the time it took for the sauce and the sauce didnt really wow me.

Classic Macaroni and Cheese

Reviewed: Nov. 2, 2006
If your looking for that old fashioned mac & cheese look not further, AWESOME!!!! I have made several but they we're always missing something and I think it was the evaporated milk. I used some sharp shredded and a couple slices of sharp block cheese and I think I did a couple layers, anyways its great!! Now my husband likes his mac and cheese more creamy (like with american cheese) so I told him next time I'll just make him some Kraft mac & cheese and I'll eat all the good stuff. Thank you, Thank you

Garlic Prime Rib

Reviewed: Nov. 2, 2006
WOW!! Very good and I even messed up and used ground thyme and more then it called for and was still great. The cooking time was a little off for me and I even made only 6 pounder but I kept a close eye on it and it turned out just fine and medium rare and so very tender!! I did use the advice of a couple people and took out at about 135 and wrapped in tinfoil and let set for about 10 minutes or so, i dont know if that is what made it so tender, but I will always make my prime rib this way and we also did use the juices with some beef broth for aujus (spelling is probably wrong) and it was great. used for french dips on steak buns the next day too. Thank you for great recipe!!!

Easy Chicken Casserole

Reviewed: Jun. 22, 2006
I thought this was great!! All three of my picky boys LOVED it. I did not have cream of chicken so I used cream of mushroom. I sauted onion and canned mushrooms together, then put in the chicken and cooked until done, and with the sour cream and soup I also mixed in about 1 and a 1/2 cups of shredded cheese, I spooned it over the chicken and spread it around a little bit, put on the ritz crackers and yum, yum. And the best part, EASY!!!!!!!!!!!!!!

Strawberry Shortcake

Reviewed: Jun. 16, 2006
AWESOME!!!!! Do not worry about making this recipe because of a couple bad reviews, those people have never had the original "shortcake" they probably always have it on pound cake or angel food cake, which is also good, but I was looking for the old fashioned short cake like my mom and grandma made and I found it!! I did not change a thing with the recipe itself, but I did take the advice of a couple reviews and put in a 8" round cake pan, sliced it like a pie when it was done and opened up the slices in a bowl, put a little butter and sprinkle of sugar on top then poured on the strawberrys(I mashed mine with sugar) YUM YUM!!!!!!!!!!!! Also it was very easy, I didnt even have a pastry blender and just used a fork and a wire whisk and it was great! THANK YOU for the great recipe!!
