That Good Salad

Used spinach, toasted pecans, grape tomatoes halved (on hand). Fresh lemon juice is key. Used garlic powder instead of garlic. Swiss cheese really makes this salad.

French Baguettes

I made w/o a bread machine & it turned out great! Just proof the yeast in the water & sugar until foamy. It was really easy & I've never baked yeast bread before. Used an egg white on one loaf & yolk on the other. Maybe next time I'll try a mix.

Shredded Brussels Sprouts

Halved recipe. Used 3 slices pre-cooked bacon, 1 tsp. butter (for flavor) & 2-3 Tbsp. olive oil (since didn't have much bacon grease). Subbed pecans for pine nuts. Did not core, just trimmed ends before shredding. I like the flavor of roasted sprouts, so after cooking in a skillet, I finished cooking by roasting sprouts on a cookie sheet (400 degrees-15 min.) to give that "nutty" flavor. Everyone really enjoyed & will be making again soon!

Ignacio's Super Peanut Butter and Jelly Sandwich

TERRIFIC!!! Made this for lunch today w/ thin white bread & everyone LOVED it! More substantial than a regular PBJ. The crunch adds something. It's so good, it's hard to put your finger on just what makes this sandwich so yummy!

Cheddar Bay Biscuits

Bland, did not resemble Red Lobster's biscuits. Probably would be better if they were not made w/ biscuit mix, but made like a traditional biscuit.

Tomato and Mozzarella Bites

If you only use 1/2 grape tomato, basil leaf, & 1/2 mozzarella ball on a toothpick, you have a 1 bite snack! Yummy!

Broccoli and Cheddar Soup

Don't try unless you really like garlic. I thought this had way too much garlic powder. It tasted okay, but no one could come close to finishing a small cup. The flour also had a "raw" flavor. Easy to make, though.

Italian Pasta Salad I

I was leery of the Caesar-Italian dressing combo, but it works nicely together...Really just turns into a flavorful, creamy dressing. Used green onions, since they were on hand, and freshly grated Parmagiano Reggiano. Looking forward to trying tomorrow after flavors have time to combine. Not my favorite pasta salad, but a quick fix if you're rushed.

Absolutely Fabulous Greek/House Dressing

Cut the recipe down to 10 servings, which was easy to measure & fit in the now-empty olive oil bottle. Would try next time w/ a better quality olive oil, but very tasty!

Chicken Milano

This is what I have been looking for--an easy Pasta Milano from Macaroni Grill! Omitted chicken completely. Added peas for color. Didn't have heavy cream, so substituted whole milk (+ 1 T. Cornstarch). Delicious!

Holiday Chicken Salad

Really good! Love the craisins & blend of flavors. Used mayo/miracle whip combo. Used red bell pepper, because I had one. Used leftover rotisserie chicken (shredded). Toasted pecans. This is a great recipe. Don't leave anything out--everything adds to the overall flavor! Be brave! I was, & I was not disappointed. Neither was my family. Everyone stood around in the kitchen eating it on crackers! Will be making again!!!

Asian Lettuce Wraps

Never had P.F. Chang's, but heard a lot about them, so thought I'd give it a whirl! Didn't have sesame oil, so just used 2 tsp. canola & added toasted sesame seeds. Also subbed ground ginger. Used 99% lean ground turkey & put in the food processor to finely grind (after cooked & cooled). Also chopped onions, water chestnuts, & green onions in food processor to save time. Added a little extra hoisin & soy (mostly bc I had a little extra meat). Tasty by itself--can't wait till dinner in bibb lettuce!
