Oil Pie Crust

Reviewed: Mar. 7, 2012
I used to use a recipe that called for shortening, love it, but due to health concerns my husband and I had to change our eating habits. I have did research on making a pie crust with oil, have tried probably at least a dozen of them, with horrible results. I found this recipe and I decided to try it out. I did make one change, I did not use 100% white flour. I used half white and half Prairie Gold wheat flour. I was VERY impressed with the results, and so was my husband. The crust baked up a beautiful brown and it stayed flaky, was not tough at all! Thank you so much for posting it!

Golden Sweet Cornbread

Reviewed: Oct. 19, 2011
Absolutely awesome cornbread! We are diabetic so instead of using white sugar I used 1/3 cup splenda and 1/3 cup of wheylow. I also replaced the white flour with Prairie Gold Wheat flour. Thank you so much for posting this!

Jalapeno Strawberry Jam

I used spenda to make this. It turned out awesome! I keep the seeds and the membranes of the pepper so it has some heat to it.

Pillow-Soft Dinner Rolls

Reviewed: Nov. 25, 2010
I made these today for our Thanksgiving dinner. I made them as listed on here, except I used Wheylow instead of regular sugar. I did find the dough was a bit liquidy and I had to add more flour during kneading. I was afraid it would make them tough. I was wrong. They were excellent. I made a little honey butter to serve with them. I don't make a lot of recipes with white flour, I wonder if anyone has tried these perhaps with 1/2 wheat and 1/2 white? Awesome recipe, thanks for posting this.

Peach Upside Down Cake I

Reviewed: Sep. 22, 2010
I doubled this recipe to put in a 9x13 inch pan. (See photo) I did add vanilla after reading the reviews. My husband and I are diabetic so I used Splenda brown sugar blend in place of regular brown sugar and spenda grandular in splace of sugar. I also used a diet margarine in place of butter. I used 1/2 white flour and 1/2 wheat pastry flour. Even though I did all that, the cake turned out great. We really liked it!

Whole Wheat Blueberry Pancakes

Reviewed: Jan. 31, 2010
I made these this morning. I found I did have to add a little more milk, plus I did add a dash of vanilla. They were excellent! I made a double batch so we can heat them in the microwave for our breakfasts. My husband and I have been eating healthy, and I prefer to cook from scratch rather than using the mixes. I asked him if he thought the recipe was "a keeper" and he said "definitely!" Thank you for sharing this, as it is so hard to find recipes that are delicious AND healthy!

Sugar-Free Frosting

Reviewed: Dec. 4, 2009
What a great recipe, thanks for posting it! My husband and I are both diabetics. He thought his days of frosted cakes was over. I made a diabetic carrot cake today and used this icing. It was sooooo good. I did use less milk after reading the other reviews on here, about 3/4 a cup.

Banana Crumb Muffins

Wow! This is excellent. These melt in your mouth! I did add vanilla, a dash of nutmeg and a bit of cinnamon to the batter. And for the steusel topping I used oatmeal instead of flour, I added brown sugar, pecans, butter, and pulverized it in a food processor.

This Apple Pie is excellent! I am diabetic, my husband is not. He loves apple pie and so do I. The first time I made this I did not tell him it was sugar free. He loved it! I have made it several times since then, and with great results each time.

A month or so ago my husband purchased me a Belgian Waffle Iron. I had been wanting to try to make the waffles from scratch, so this morning I used this recipe. It is excellent! My family loves them, and I will not purchase a box mix again. Thank you for sharing this recipe!

I usually go for the "bread machine" recipes, but this one caught my eye. My family loves it. It is easy to make and has a wonderful taste and texture. I mix honey and butter to glaze the top with after baking.
