Orange Pecan French Toast

This was very good. I zested an orange (more than a tsp) and then juiced 2 oranges for the 1 cup. I buy loaf breads from the store that have been reduced and throw them in the freezer in freezer bags. They came in handy this morning when I saw this recipe. Not sure how others felt, but the recipe says it serves 12 people!! My husband and I almost ate the entire casserole! At most I would say 4 servings for adults, IF you are having something else with it like bacon, sausage or fruit.

Broccoli with Rigatoni

This was okay. kinda bland. I tweaked it by adding some roasted chicken that I had leftover and also some kielbasa sausage that I had grilled. 2 TBSPs of Parmesan is a joke! I added about a cup and it still needed help.

Stuffed Filet Mignon Bites

these were so delicious! I did not have any jalapeno, so I subbed saute'd shallots instead. Very tasty, it is a must to eat these with your fingers. They are so much better that way. I will try the jalapeno's next time.

Delicious Ham and Potato Soup

This is absolutely the BEST potato & ham soup we've ever had!! My husband loved it. I came home and threw it together in no time! I tweaked it some by adding a couple carrots. I mashed up potatoes with a masher just to make it thicker.

Popcorn Salad

This was delicious, surprisingly! My husband is very critical about food and he loved it. He even repeated his compliment several times that night. We took this to a neighbors cookout and everyone loved it and asked for the recipe. I followed the recipe with the exception of the chives (didn't have any). I also was very skeptical at first b/c the mixture without the popcorn didn't look too appetizing, but once the pc was added and the bacon and cheese was added on top, you really couldn't tell that there was popcorn in it. I will definitely make this again and maybe add some red onions to it. Thank You.

Zucchini Risotto

This was my first time making risotto. I've never even tasted risotto before so I really didn't know what to expect. It was time consuming to make, so I wouldn't recommend this to the busy person. I really enjoyed it, but I like about everything! My husband didn't have much to say about it, so I wouldn't it will be a favorite. I think I added the zucchini and tomatoes a little too early, cause they weren't crunchy. I also added bacon when I added the onion. Overall it was good to me.

Pesto Chicken Pasta

Oh my gosh, EVERYONE loved this one!! I was concerned at first b/c my first experience with Pesto sauce wasn't a good one. Boy did this one make me feel good. My husband has requested that I make this for our company tomorrow!!

Foil-Baked Salmon

I have to be fair with this rating since I don't fix seafood ever and I bought a salmon steak (not knowing about all the bones). All the bones was a turnoff, but I'll bet it would be much better with the fillet. I loved all the toppings.

Grilled Lamb Chops with Tarragon

I loved the flavor the tarragon gave it, I've never used tarragon before. I had to use pork chops since I couldn't find lamb chops in our commissary. I couldn't find polenta for the side dish, so I used orzo (that was new to me also). I LOVED the cool as cucumber salad.
