Mediterranean Quinoa Salad

Reviewed: May 14, 2013
This was delicious. I replaced the chicken with a can of garbanzo beans to make it vegetarian. But 2/3 cup lemon juice??!! That's insane. I barely used 1/4 cup.

Pumpkin Turkey Chili

Reviewed: Oct. 22, 2012
This is an excellent base for chili!! I added a can of black beans, a can of diced tomatoes, a can of corn, 3tbsp of chili powder, about 1/2 tsp of cumin, a splash of vegetable broth, a dash of nutmeg, and some chopped cilantro. Delicious and healthy.

Quinoa and Black Beans

Reviewed: Oct. 21, 2012
This was excellent!! First time cooking/eating quinoa and am definitely a fan. I used one can of black beans like the other reviewers suggest. We spooned ours into little corn tortillas, topped with a bit of sour cream... yum yum yum. A new favorite is found.

Mini Pumpkin Whoopie Pies

Reviewed: Dec. 6, 2011
These are so cute when finished! And tasty. I followed the recipe for the cookies exactly, but next time I'll definitely substitute some brown sugar for the white. With the filling I only used about 3 tbsp of butter and slightly less sugar than called for. I piped the filling onto the cookies, definitely easier and less messy. In regards to shape I don't think they need to all be perfectly round. My only issue was keeping them the same size. Mine got a little bigger with each batch! Just takes some patience, and they are worth it. YUM

Tuna Noodle Casserole

Reviewed: Nov. 29, 2011
This was delicious. I followed the recipe exactly except for the mayo. I barely put in a 1/4 cup. 1/2 cup would have made it too gooey in my opinion. I topped it with another thin layer of cheese, but next time I'll definitely try bread crumbs as well.

Tofu and Veggies in Peanut Sauce

Reviewed: Nov. 15, 2011
I took some other reviewer's suggestions and fried the tofu with garlic and ginger first and added a splash of lime juice to the sauce. I was generous with the cayenne, even adding a bit more while cooking. After all this the dish was still mostly peanut butter to me. Not bad, but not what I was hoping for.

Iced Pumpkin Cookies

Reviewed: Oct. 31, 2011
These are yummy! Very cake-like cookies. I used a 1/2 cup of brown sugar in place of white, but otherwise I didn't change a thing. 15 minutes was the perfect cook time for me. I did make the glaze, but the vanilla was a tad overpowering in my opinion. I'll take other reviewers' advice and try a cream cheese frosting next time.

Tofu Vindaloo

Reviewed: Sep. 19, 2011
I made this exactly as the recipe states, except I used regular curry powder, and it was a huge hit. Lots of yummy leftovers. Will definitely be making this again.

Vegetarian Korma

Reviewed: Apr. 20, 2010
This was very tasty! I had to use a full 8oz can of tomato sauce or it got too dry. I also used coconut milk instead of cream and added some garam masala. Will definitely make this one again.

Quick Pasta Carbonara

Reviewed: Mar. 22, 2010
This was ok. I sauteed some chopped onion and garlic before adding the other ingredients and it was still a bit bland for my taste. But it was a nice easy way to use up some food in my fridge. Husband enjoyed it.

Potato Bacon Chowder

Reviewed: Mar. 15, 2010
Just devoured this! Very good and super easy. I used vegetable broth instead of water to cook the potatoes. Also mashed the potatoes a bit once they were cooked. Next time I will add some garlic. Excellent recipe!!!

Red Lentil Curry

Reviewed: Dec. 20, 2009
I must live in the middle of nowhere, because I can never find ren lentils!! But, I use regular lentils and it turns out just as scrumptious. Let it simmer a while for maximum results

Downeast Maine Pumpkin Bread

Reviewed: Dec. 20, 2009
This is the exact same recipe as the Better Homes and Gardens Pumpkin Bread except for the cloves. I did the 1/2 cup applesauce and 1 cup brown sugar bit. But otherwise I didn't change a thing. A crowd pleaser, I have friends asking when I'm going to make it again. Excellent and easy bread recipe.

Black Bean, Corn and Turkey Chili

Reviewed: Dec. 20, 2009
This came in handy when I needed to get rid of a pound of ground turkey! Everything else needed I already had! I did add another tbsp of chili powder and even sprinkled some cayenne in towards the end, but we like spice. I also added a tbsp of minced garlic in addition to the garlic powder. But we also love garlic. All in all I really like this recipe. Super easy and great with corn bread or those chili Fritos sprinkled on top. Yum!

Cauliflower with Dijon Sauce

Reviewed: Sep. 18, 2009
Oh my goodness I was so happy to find this recipe after my oven broke and I didn't know what to do with a head of cauliflower. Very tasty. Next time I would take another reviewers tip and use Grey Poupon instead of the mustard. I think that would make for a tastier and creamier sauce. Otherwise this was excellent and my hubby gobbled it up.

Black Beans a la Olla

Reviewed: Aug. 26, 2009
This was SO GOOD and super easy. It was just spicy enough. I followed other reviews and let it simmer a while longer. My husband used the leftovers for burritos the next day. We will make this again for sure.

Love this!!! One of the only ways I can get my hubby to eat cauliflower. I don't do anything special to the recipe. It really is perfect AS IS.
