Mediterranean Quinoa Salad

This was delicious. I replaced the chicken with a can of garbanzo beans to make it vegetarian. But 2/3 cup lemon juice??!! That's insane. I barely used 1/4 cup.

Pumpkin Turkey Chili

This is an excellent base for chili!! I added a can of black beans, a can of diced tomatoes, a can of corn, 3tbsp of chili powder, about 1/2 tsp of cumin, a splash of vegetable broth, a dash of nutmeg, and some chopped cilantro. Delicious and healthy.

Quinoa and Black Beans

This was excellent!! First time cooking/eating quinoa and am definitely a fan. I used one can of black beans like the other reviewers suggest. We spooned ours into little corn tortillas, topped with a bit of sour cream... yum yum yum. A new favorite is found.

Mini Pumpkin Whoopie Pies

These are so cute when finished! And tasty. I followed the recipe for the cookies exactly, but next time I'll definitely substitute some brown sugar for the white. With the filling I only used about 3 tbsp of butter and slightly less sugar than called for. I piped the filling onto the cookies, definitely easier and less messy. In regards to shape I don't think they need to all be perfectly round. My only issue was keeping them the same size. Mine got a little bigger with each batch! Just takes some patience, and they are worth it. YUM

Tuna Noodle Casserole

This was delicious. I followed the recipe exactly except for the mayo. I barely put in a 1/4 cup. 1/2 cup would have made it too gooey in my opinion. I topped it with another thin layer of cheese, but next time I'll definitely try bread crumbs as well.

Tofu and Veggies in Peanut Sauce

I took some other reviewer's suggestions and fried the tofu with garlic and ginger first and added a splash of lime juice to the sauce. I was generous with the cayenne, even adding a bit more while cooking. After all this the dish was still mostly peanut butter to me. Not bad, but not what I was hoping for.

Iced Pumpkin Cookies

These are yummy! Very cake-like cookies. I used a 1/2 cup of brown sugar in place of white, but otherwise I didn't change a thing. 15 minutes was the perfect cook time for me. I did make the glaze, but the vanilla was a tad overpowering in my opinion. I'll take other reviewers' advice and try a cream cheese frosting next time.

Vegetarian Korma

This was very tasty! I had to use a full 8oz can of tomato sauce or it got too dry. I also used coconut milk instead of cream and added some garam masala. Will definitely make this one again.

Quick Pasta Carbonara

This was ok. I sauteed some chopped onion and garlic before adding the other ingredients and it was still a bit bland for my taste. But it was a nice easy way to use up some food in my fridge. Husband enjoyed it.
