Filet Mignon with Garlic Shrimp Cream Sauce
My husband, who normally does not like filet mignon b/c it's a leaner cut, loved this. The steak cooked to tender perfection. I will cook filets this way again and again (method) even with other recipes. This recipe is delicious. The sauce is great. I did add a handful of parmesan cheese to it.

Paul's Pumpkin Bars
yummy bars or cake... whatever you want to call it! I reduced the sugar to 1 cup, and reduced the baking soda and powder by a little bit each. Even though I am sure the frosting is delicious, we have a dairy allergy- so I made a vanilla cinnamon glaze to go on top.

Banana Crumb Muffins
This is a great muffin! Moist, great rise, delicious. I substituted 1/2 cup agave nectar and 1 T honey for the sugar and used 1/3 cup coconut cream (out of can) in place of the butter. I read from others oil would work- and I have no doubt about it b/c the coconut milk cream worked beautifully. Also added a tiny tiny bit of pumpkin pie spice and a bit of cinnamon.
