Harvest Pumpkin Cupcakes

I made these last night with my 3 year old. I made some changes to make them a bit more figure friendly. I kept most of the dry ingredients as written in the recipe. I tweeked the wet ingredients by doing this:to the eggs, I added 1 cup of sugar. Instead of the oil, I browned one stick of butter until it turned brown (adds an intense flavor while cooking out some of the butter fat), I added 1 1/2 cups of applesauce to the egg mixture. The cupcakes came out moist, flavorful, sweet, and wonderful. It wasn't dense and hard to eat. They were moist and sooooo yummy! I recommend the changes; I wrote the modifications on my copy of this recipe for future usage. I didn't have pumpkin spice, so i sprinkled in cinnamon, ground cloves, nutmeg, mexican chili powder, and a pinch of salt. WoW

Slow Cooker Lasagna

very tasty. I let mine cook for 3 hours or so. I added fresh basil to the sauce. Sauce was my top layer. I added cheese after i cut off the crockpot, taking the advice of other reviewers. I added mushrooms to the sauce, green bell pepper, and onions too. I topped each layer with ricotta cheese and parm cheese. very nice.

Beef Bulgogi

my husband liked it and so did the kids. i think it was okay; i wasn't wowed at all by it. i was really expecting something sweeter and more caramalized that what I got. I followed the recipe to a T. Since I've never had real Korean beef, I don't have anything to compare this recipe to.

Oatmeal Pancakes II

These were yummy!! They were a great alternative to the box mix that I've always used. I had oatmeal pancakes for the first time last week at a little diner and I thought, "I can make these myself." I liked the ones that I was served so much that I made some myself. I took advice and lightened up on the salt. I used 1/4 tsp. I used 1/2 tsp of baking soda. I included almond extract along with the vanilla, since I had them both on had. The almond was really flavorful. I doubled the recipe because others said the single batch didn't make enough. With the doubling, I had 8 pancakes to serve to a family of 4. They weren't huge pancakes. Probably more like medium sized. I added 1 1/2 cups of oats because after doubling, I feared the batter would be too watery. Everything fluffed up perfectly. I cannot wait to make these again soon. I didn't have buttermilk, so I made my own by including 1 TBL of lemon juice in the milk.

Aussie Chicken

this was wonderful. I didn't follow the recipe to a "T," though I should have. My honeymustard sauce needed a little more sweetness, but I took advice from others to leave out the syrup stuff. Get good quality bacon; mine wasn't quality because i let my husband get it from the grocery store...'el cheapo! The chicken was moist and very, very tasty. it reminded me of OUtback a little. My picky son ate 1 1/2 breasts; he skipped out on the sauce. I cooked everything separately before assemblying the chicken. For instance, i good the mushrooms in a little evoo, then I backed the bacon in the oven to get a desired crunchiness. I didn't have shredded cheese, only sliced deli cheese, but it was good just the same.

Sourdough Chipotle Chicken Panini

i made this tonight and my hubby said, "Great Sandwich!" Changes that I made: I didn't measure the dressing, though I should Have because i ran out of sauce and my hubby's was a little dry in that dept. I carmelized onions, red and green peppers, and cooked mushrooms. I used havarti cheese. i didn't have the chipotle powder, but i did have the chipotle peppers in adobe sauce frozen in my freezer. I took out one pepper, nuked it, mixed it into the dressing. I seasoned my chicken with salt, pepper, and chili powder. i didn't have sour dough, but i had some panini bread that i got from Fresh Market on hand. i buttered both sides of the bread before i put the sandwich together, put it on my panini grill and yummy. i will make this again, very soon!

Grilled Chicken Thighs Tandoori

amazing! I followed the recipe as is the first time. The second time, I used the seasoning amounts that I wanted and it still turned out wonderful. I had a bunch of pleased, picky eaters.

Basic Crepes

It was a perfect recipe for perfect crepes. it was my first attempt and they were beautiful and yummy. Even my picky eater ate one. I filled mine with 1 package of cream cheese, juice of one orange (lemon would taste nice too, but didn't have any), powdered sugar, a little milk (the cream cheese filling was cooked separately of course!). then, i topped the crepes with blueberries that i cooked in water and splenda. i thickened the blueberries with a little corn starch. My husband devoured the crepes. I can hardly wait to take this recipe to the beach with us this summer. i tried to duplicated my favorite crepes from a breakfast restaurant that i frequent, but it was close enough. enjoy!
