Brooke's Best Bombshell Brownies

I literally threw away 2 other brownie recipes that I loved because this recipe was a HUGE hit with my husband and folks at church. Wonderfully rich, deep chocolate flavor. Note: I reduced the vanilla to only use 1 teaspoon because I use a high quality vanilla extract (Penzey's) and I wanted maximum chocolate flavor. The only negative thing about this recipe is that the outer edge was so hard to cut through, that I had my husband cut the brownies. Other reviewers had mentioned this, and I'm not sure what the answer is to avoid this. Trust me though, the brownies are well worth cutting away the small amount on the edge! One other tip - I removed the brownies from the oven when a tooth pick inserted into the center was still slightly wet. I usually do this with brownies as they will continue to cook a bit while cooling. I'm going to try this recipe again using 1/2 of the semisweet chocolate chips and 1/2 peanut butter chips. Great recipe and one of the few I took the time to review. Thanks Brooke for a great new staple recipe for my collection!

Vanilla - Chocolate Powdered Sugar Frosting

Just made this without the cocoa, with about 2 tablespoons of softened cream cheese and only a bit of the milk as needed. Beat it until it was fluffy, put into a pastry bag & piped onto cupcakes. Added some Christmas sprinkles & mini candy cane. The frosting was perfect and very good!

Lemon Cream Torte

Wonderful & refreshing! My aunt had given me a very similar recipe, so I made slight changes to the recipe posted here. I added the chopped pecans to the flour & butter mixture and I used 3 cups of cold milk. Also, I increased the crust recipe, using 2 cups flour, 1 cup chopped pecans, 2 cups MELTED butter. Thanks for posting this Eleanor. Its a great dessert.

Quick Chili I

This is my husband's favorite chili recipe. I made very slight changes which are: Instead of Italian-style diced tomatoes, I use Chili-style diced tomatoes (usually find this at WalMart). I use 2 cups of water instead of 1. I increase the chili powder & ground cumin by 1 teaspoon each. Instead of simmering on the stove, I put everything in the crockpot and cook on low heat for 6 - 8 hours. Makes the house smell wonderful and the flavors have that "next day" taste which I love from soups, stews & chili.

Pork Chops to Live For

Delicious. I made slight changes. Instead of browning in shortening, I used 1 teaspoon butter & 2 tablespoons EVOO. Browned the chops (I did not use egg & flour) slightly. I sliced one large, Vidallia onion - put 1/2 into crockpot, chops on top, remaining onions. Mixed 1 can of cream of mushroom soup, 1 can cream of mushroom with garlic soup & one cup of milk, salt & pepper. Poured over chops & onions. Cooked on high for 4 hours. Wonderful gravy!!

Sarah's Applesauce

Very good basic recipe! I made this in a small crockpot. I substituted apple cider for the water and added an extra tsp. of ground cinnamon. I used Gala apples because that is what I had on hand. Next time, I will cut back the liquid by 1/2 C if I use Galas. For my taste, I know I'd prefer to use an apple that is a little on the tart side. (Usually have Galas for hubby.)

Boston Iced Tea

Perfectly refreshing. I made this using 4 family size Luzianne tea bags and steaped for 1 hour. I added 1 cup of sugar and one can of cran-raspberry frozen concentrate. Wonderful!

Salsa Chicken

Fabulous! I made slight changes which were: 2 pkgs of taco seasoning mix placed into a large ziplock bag. I rinsed chicken, shook off excess water then placed one breast at a time in the bag and shook to coat the chicken. Shake off excess seasoning. I used 2 cups of salsa and a bit more cheddar cheese. Absolutely a keeper!! My husband, who is not a particular fan of sour cream said that the sour cream was an absolute must with this recipe. Perfect blend of flavors. As another member had done, I made the Best Black Beans to go with this. Slight changes on that recipe were I used 1/2 tsp Cumin instead of the Cilantro and I added 2 tsp of lime juice. (Other ingredients I used per recipe.) Brought everything to a boil, then covered the pan and simmered on low for 20 mins. I served the beans over Mahatma (brand) yellow rice which I cooked in the microwave. A wonderful dinner!!!

Caramel Bars

I used an 8 x 8 inch glass baking dish. Also, I used real butter & increased the final segment of baking by 6 mins. The bars turned out nice & golden brown and absolutely perfect! Be sure to let the bars cool completely before cutting. This is a keeper!

Beef Barley Vegetable Soup

I altered this a bit and it was absolutely fantastic! My husband doesn't like cooked veggies so I was afraid that he wouldn't like it, but he loved it! I cooked this on top of the stove for several hours. First, I left out the frozen veggies. I used 3 lbs of stew meat (did not brown) instead of the roast. I increased the broth using 4 cups of ready-to-use Swanson's Beef Broth, 1 10.5 oz can of Campbells Beef Broth double-strength (did not dilute), and one 14 oz can of Swanson Lower Sodium beef broth. I also increased Barley & used 2 cups of Quick Cooking Barley during the last 20 mins. A keeper!
