Asian Grilled Chicken

I love this recipe; now in our regular rotation. Simple and delicious, flexible too as I've made it without the sweet Thai chili sauce or had to sub different combinations of citrus juices. I'm sure it would work well with breasts too but definitely try thighs - so much more moist and flavorful. Thanks!

General Tsao's Chicken II

The sauce was fantastic, but something went awry for me in the coating/frying process. I tried to follow the instructions exactly but coating the chicken turned into a big gloopy mess and ended up making the coating too thick. Since it was such a time-consuming process I think I will follow some other reviewers' suggestion to just sauté the chicken and save some frustration and fat. :) I also did not have peanut oil but using sesame oil/peanut butter instead worked great.

Italian Veggie Rolls

So good! A bit time-consuming but worth it. Subbed some spinach for the peas and added 1/2 lb. browned pork sausage. Probably used 1/2 to 3/4 of the box of noodles. Following other reviewers' suggestions of chopping veggies small (1/4" dice) and laying out noodles on aluminum foil helped with rolling. Used a spicy sauce which gave it a nice kick. Definitely a new favorite in our house!!

Split Pea and Ham Soup I

Good basic recipe but I think I will have to make some adjustments next time to be really good. I used a smoked ham hock and added 1 tsp. bouillon but I would add more and perhaps some garlic and carrots. I would also increase the water/broth as it was too thick, and I like thick soups! But a good starting point and not bad for my first attempt at split pea soup.

Chicken Tortilla Soup V

Easy and delicious. Used rotisserie chicken and lime juice and added a can of pinto beans. Started with spices as directed but after tasting upped the cumin to 1/2 tsp and chili powder to 1 1/2 tsp. Consistency was just right with the beans. Thanks!

White Sauce

I was looking for a good base for a sausage pasta using ingredients I had on hand and this worked great. Browned up some pork sausage with onion, garlic, italian seasoning and crushed red pepper; added s&p and grated parmesan to the white sauce and tossed with linguine and had an easy meal. Thanks!

Fajita Seasoning

Great flavor! Nice that it's all ingredients we normally have on hand. Worked well with venison. Mixed in some lime juice to make it more of a paste to spread on the meat to marinate. Thanks!

Peanut Sauce I

Very good and easy! Subbed soy sauce and honey, and used 1/2 tsp cayenne since we have a little one. Started out with less vinegar just to be safe but it's definitely best with full amount. Might try with a bit less peanut butter next time...

Cheddar Bacon Hamburgers

Best burger recipe ever! Don't leave out the horseradish; provides great flavor but no heat (our 17-month-old loved them!). I added an egg since I was using venison but otherwise recipe is perfect; will be our go-to burger recipe from now on!

Simple and delicious. Great with rotisserie chicken. I added 1 tsp garlic powder, 1 tsp parsley and 1/2 tsp paprika and baked at 375 for 45 min as one reviewer recommended.

Quick and Easy Green Chile Chicken Enchilada Casserole

I like this change from regular enchiladas but it needs some tweaking. The flavor was great (with 1 tsp. each of cumin, chili powder, garlic salt added in with the chicken/sour cream) but it turned out mushy. :( I skipped the step of charring the tortillas so I'll have to try that next time.

Curried Lentils

Very good with adjustments based on reviewer suggestions: used chicken broth instead of water, coconut milk not cream, and curry powder not paste; doubled all ingredients except coconut milk; added 3/4 cup shredded carrot and 1/2 cup golden raisins with the curry and coconut milk. Great with quinoa, tomatoes and avocado in tortillas!
