Broiled Tilapia Parmesan

This was excellent, I did make some changes due to the fact that we watch our fat and calorie intake. I seasoned the fish with a small amount of Sazon on both sides and broiled for 3 minutes. I then flipped the filets and topped with a small amount of chipotle mayo (fat free mayo mixed with chipotle and adobo) some garlic and onion powders and then just sprinkled some parm on top and returned to the broiler. I used very little mayo and skipped the butter all together, it was very good.

The Best Rolled Sugar Cookies

I tried this recipe a few times and each time the cookies spread horribly, even after chilling overnight and before the cutouts went in the oven. Because of this, I made the recipe with 1 cup Crisco and 1/2cup butter. Once I did this, the cookies came out very well. I also crank the oven up very high so the cookies would set in their shape quicker. I tend to prefer the cookies to brown slightly. I also like to use almond extract in place of vanilla

Melt-In-Your-Mouth Meat Loaf

Pretty good. I used 94% lean ground beef, added a dash of Worcestershire sauce to the meat itself, a pack of onion soup mix, about half of a small onion, grated and 4 cloves of garlic. I did not add the sage as I did not have any on hand. As for the sauce, I left out the sugar completely. Cooked in the crock pot for about 4 hours on low and switched to the warm setting for the remaining 2 hours. My dinner guest thought it was very good.

Cream Cheese Frosting II

I made two batches, one as directed which turned out too soft to pipe onto cupcakes. The second, I first whipped the butter and sugar well, then added the COLD cream cheese a piece at a time. The result was a delicious, thick pipeable cream cheese frosting. This method is the key!

Raspberry and Almond Shortbread Thumbprints

I really had troubles with this recipe, as it seems many of you have. I tried 2 different batches, chilling the dough before putting in the oven, etc... and they spread so badly they went right in the trash. After doing some research, I am thinking my issue resulted from using a silpat, which apparently can cause cookies to spread much more than they normally would. I will update my review once I try again on parchment. To the others who had a spreading issue, please let us know if you also used a silpat. I am giving the recipe the benifit of the doubt and giving it 3 stars for now. Update: It was not the silpat. The last thing I can think of is that my oven is getting way too hot. I will test this theory tonight

Chicken Enchilada Soup III

Yummy. We used 2 can sof black beans, 1 can cream corn, 1 can rotel, 1 can jalapenos and 1 can green chiles. I used between 2 and three cups of stock and 1/2 cup masa. Upped all of the spices and used double the enchilada sauce. Leftovers were served with some mexican rice mixed in.

Baked Omelet Squares

Delicious and low cal! I used two cartons of Southwest Egg Beaters, sauteed mushrooms, onion, green onion, jalapenos, green pepper, garlic, ham and sliced tomatoes. Topped with cheddar and put back in oven for a few minutes. Served with sour cream and hot sauce. The only issue I had was that it was a bit watery from the veggies even tough I had sauteed them first.

White Chili I

Pretty good, although I did alter per some other reviewers suggestions: I used 2 cans of beans, one of them mashed with liquid and all. I also added a can of cream corn, fresh cilantro and jalapenos in addition to the green chiles

Fiesta Stuffed Peppers

I ended up changing the recipe quite a bit but what I did make was excellent. I used poblano peppers and stuffed them with the following: taco seasoned ground turkey 1 egg small can of corn sliced black olives green chilies poured a small can of red enchilada sauce over the whole thing and baked to an internal temp of 160. I then added cheese and returned to oven to melt. Finally I topped with mashed avocado, sour cream and green onions.

Slow Cooker Chile Verde

This was awesome. I skipped the tomatoes and used a jar of salsa verde and about 8oz of verde enchilada sauce. I also cooked on low for probably about 9 hours rather than starting on high and reducing temp. Served on tortillas with jack cheese and avocado. So good!

Baby Back Ribs

Excellent! I made a rub and let it sit overnight instead of the BBQ sauce. I added the sauce at the end and stuck it under the broiler for a few minutes. Came out just perfect.

Chocolate Peanut Butter Cup Cookies

Perfect! I used Reeses pieces instead of the peanut butter cups. I also used crisco instead of butter and added a bit of baking powder because I didn't want them to spread too much. My co-workers loved them.

Chicken Enchiladas

Pretty good. The soup/sour cream mix ended up being a bit too much so I might reduce next time. I added a can of green chiles to the chicken mix. Overall very yummy, I might also try it with verde sauce next time.
