French Toast Casserole

I was looking for a simple french toast recipe that tasted good and this one delivered! Instead of margarine, I used light butter. I was running out of time so I didn't get to "dot" it with the butter or let it stand for 10 minutes. Instead I just melted the butter and poured it on top with the cinnamon & sugar. Easy & yummy! Thanks for a great recipe.

Marinated Ranch Broiled Chicken

Great recipe...so easy and tasty. I agree with other reviewers - double the marinade (I let it sit for about 10 hours). Also, it took longer than 15 minutes to broil so make sure it is cooked through like the recipe states.

Creamy Coconut Cake

This is a perfect coconut cake recipe - easy & incredibly tasty. The only basic changes I made were to use a fork instead of a straw to poke the holes, pour the cream/cond milk mixture while the cake is still hot and I made fresh whipped cream. I didn't have to use all 10 oz of the flaked coconut either. The key to this cake is to refrigerate it overnight so the cake has a chance to set and the milk mixture really soaks in. Thanks for a great recipe.

Boudreaux's Zydeco Stomp Gumbo

Great recipe - have made this twice and here's what I found: I used half the broth (1.5 quarts) and did not use beer. I also used half of the flour/oil for the roux BUT I kept the amounts the same for the rest of the ingredients. This made the gumbo less soupy which is what I prefer. I did not use the red pepper, instead I used paprika. This had the perfect amount of spice...I think the red pepper would have been too much.

Super Swiss Steak

Great flavor! I used less meat (1/2 of what the recipe called for). I cut it into bite size servings so it ended up more like a stew. Thanks for sharing!

Scalloped Potatoes and Hamburger

thanks for this recipe! it's a great go to recipe when you don't want to go to the store :) Here are the changes that I made: ground beef-season with pepper,onion powder; omit the onion; potatoes-used 2 potatoes,left the skin on, seasoned with salt,pepper, garlic & onion powder; added shredded cheese to each layer; mushroom soup mixture - added 1/2 cup milk, 1/2 cup sour cream, seasoned w/ black pepper.

Restaurant-Style Hashbrown Casserole

This is a great recipe! I made some changes based on other reviews. Use 1/4 cup chopped onion instead of 1/2 cup. Add 2/3 cup sour cream. After the casserole has baked for 35 minutes, add some shredded cheese on top and bake for an additional 10 minutes.

Caramelized Baked Chicken

This is a definite "go-to" recipe. It's easy but very flavorful! Changes based on other reviews: use 1/4 cup soy sauce (instead of 1/2 cup) & 1/2 cup honey (instead of 1 cup). Heat the marinade first and add a little cornstarch to thicken.When baking, turn chicken at the halfpoint & baste every 15 minutes.

Pumpkin Roll II

Perfect!! I followed the recipe exactly except I used parchment paper instead of a linen towel and it worked great.This type of baking would normally intimidate me but it was actually easy. Thanks for a great recipe.
